Mint pulao/ puthina pulao / mint pilaf recipe/ lunch box recipe

Mint pulao recipe with step by step pictures 


                 Mint pulao is a very flavorful pulao instead of all other pulao recipes.  I had used the mint leaves in many pulao recipes and biriyani recipes.  I thought of doing this mint pulao recipe for long time. And i made it .

                I have made this for the first time and it came out soo good.  This is a perfect lunch box recipe . In this pulao i have used carrot,  potato,  soya chunks and green peas to make this pulao even healthy.  You can make this recipe whenever you have minimum time to cook.  This recipe takes just 30 mins and fulfills your taste buds.  Give it a try and sure you got to doing this recipe whenever you buy mint leaves.  Enjoy the food. 


Ingredients :

.  Cinnamon - 2
.   cardamom - 2
.   cloves - 4
.   bay leaf  - 2
.   Star anise - 1
.   onion - 1 big onion ( chopped lenthwise)
.   Mixed vegetables ( carrot,  potato,  green peas)  -  2 cup chopped 1 inch size 
.   Rice  -  2 cup 
.  coconut milk  -  1  cup 
.  Turmeric powder  - 1/2 tsp 
.  Salt to taste 
.  Oil or ghee  - 3 tblsp 

To grind:

.  mint leaves  -  1 handful 
.  Coriander leaves  - 2tblsp 
.   Green chillies  - 2 
.  garlic cloves - 6 
.  Ginger - 2 inch piece 
.  Lemon juice  -  2 tsp 

Method :

   1.  soak the rice for 1/2 an hour.  Drain it and keep it aside. 

   2.   Grind the ingredients. 

    3.  Heat oil or ghee in the pressure cooker.  Add the dry spices.  

    4.  After it spultters,  add chopped onion and saute until it becomes soft. 

   5.   Add the vegetables and saute for 2mins. 

   6.  Add the ground paste and give it a mix. Add turmeric powder and salt to it.

    7. Add coconut milk  and water.  After roll boil,  add soaked rice.  

     8.  When it starts boiling,  cover with lid.  Pressure cook for 2 whistles. 
  
       9.  Fluff the pulao and serve.

           Soak rice for 1/2 an hour


           Heat oil or ghee in the pressure cooker


Add whole spices


After it sizzle,  add chopped onion


Saite until onion becomes golden brown 


Add chopped veggies


Add salt and turmeric powder.  Saute for 2 mins


In the meantime,  take the ingredients given under to grind in a mixer jar


Grind it to a smooth paste by adding 1/4 little water


Add the mint puree to veggies



Mix well for 2 mins



Add coconut milk


Add water ( for 2 cups of rice,  add 4 cups of water i.e., 1 cup Coconut milk and 3 cups of water)  


Let it comes to roll boil


Add soaked rice


Cover with lid and pressure cook for 2 whistles.  After pressure releases,  fluff the pulao with a laddle




      10)  Serve. 

Note :


      1.  I have added coconut milk to it.  Another method,  you can add the grated coconut while grinding the mint paste. 

      2.  You can add lemon juice to this recipe that increases the colour and gives you more tangy mint pulao. 

      3.  While grinding the mint paste,  we are adding 1/4 cup of water to it.  So,  adjust the quantity of thin coconut milk that you are adding.
