Peanut chutney - sidedish recipe with step by step pictures
Peanut chutney can be made in many types. This recipe is learnt from my mom. She used to give it for my lunch box. It is fresh for 5 to 6 hours.
Many people use the peanuts with skins. But I always remove the skins before making chutney to give it a sweet taste.
You can have this chutney with idli, dosas, or paniyaram. It tastes really yummy. So Give it a try.
Ingredients :
. Peanut / groundnut - 1/2 cup
. Onion - 1 medium roughly chopped
. Tomatoes - 2 small roughly chopped
. Garlic cloves - 5 nos
. Dry red Chillies - 3 nos
. Oil for cooking
. salt to taste
For tempering:
. Mustard seeds - 1/2 tsp
. Curry leaves - 1 sprig
Method :
1. In a heavy bottomed pan, add the fresh peanuts.
2. Dry roast the peanuts in low flame until golden brown.
3. After it gets cooled, remove the skins. Keep it aside.
4. Add oil in the a pan. Add chopped onion, tomatoes, garlic and dry red Chillies.
5. Fry until it cooked soft. Add the roasted peanuts. Stir for 1min in low flame.
6. After gets cooled, blend well by adding salt and water.
7. Serve with idli, dosas.
Pictorial:
1) Take fresh peanuts in a pan.
2) Roast until golden brown.
3) Let it cool.
4) Remove the skins.
5) keep it aside.
6) Add oil.
7) Add onion, tomatoes, garlic, dry red Chillies .
8) Fry until soft.
9) Add peanuts.
10) Stir for 1 min.
11) Add salt and blend well.
12) Serve.
Note:
1. while roasting peanuts, keep the burner in low flame. Otherwise the chutney gives you burnt smell.
