Aloo gobi masala recipe with step by step pictures
Aloo gobi masala is an ultimate vegetarian combination for naan, paratha, chapathi, dosa, roti. Usually i made aloo gobi masala with simple ingredients that i had in home. But Today I made restaurant style aloo gobi masala with some added ingredients. Even non - vegetarian people do love this recipe for its rich and creamy texture. Potatoes and cauliflower is always a great combination. Try this recipe and give your valuable comments. Hope you like it.

Ingredients :
. Aloo/ potatoes - 3 medium ( chopped into cubes)
. gobi/ cauliflower - 2 cup (florets)
. onion - 1 big onion ( roughly chopped )
. tomatoes - 2 medium ( roughly chopped )
. ginger - 2 inch piece
. Garlic cloves - 6 nos.
. Cashew nuts - 10
. turmeric powder - 1 pinch
. Kashmiri red Chilli powder - 1 tblsp
. Coriander powder - 1 tblsp
. Garam masala - 1 tblsp
. Fresh cream - 4 tblsp
. Kasuri methi - 1 tsp
. Cumin seeds / jeera - 1 tsp
. Butter - 1 cube
. Oil - 2 tsp
Method :
1. Blanch cauliflower florets in hot water with 1 tsp salt for about 15 min.
2. Soak cashew nuts in hot water for 10 min. Heat oil in a kadai, add roughly chopped onion ,tomatoes, ginger and garlic. Saute until it becomes mushy.
3. Let it cool. Transfer to mixer jar along with soaked cashews. Grind to smooth paste.
4. Heat butter in a kadai. Add cumin seeds. After it crackle, add grounded paste. Cauliflower florets and cubed potatoes.
5. Mix well . Add 1 cup of water. Add turmeric powder, kashmiri red Chilli powder, coriander powder, salt. Mix well. Cook for 10 min.
6. Add Garam masala. Cook for 5 min or until veggies are cooked.
7. Finally add fresh cream and crushed kasuri methi just before switching off the flame. Serve.

14) Add garam masala. cook for 5 min or until the veggies are cooked.
15) finally add fresh cream and crushed kasuri methi just before switching off the flame.
16) Serve.
Note :
1. I have used kashmiri red Chilli powder to give nice colour to a masala as it is not spicy but Colourful.
