Mint chutney recipe - side dish for dosa, chapathi, etc.,

          Tangy and tasty mint chutney is my all time favourite.  This chutney is easy to make and very delicious too. 
            Mint chutney is a very good sidedish  dosa,  idli, paniyaram.  It is a very good accompainment for steamed rice too.

Ingredients :

. Mint leaves  -  2 handful tightly packed 
.  onion   -   3 medium chopped roughly 
.  Tomato   -  3 medium chopped roughly 
.  Garlic   -   8 to 10 nos. 
.  Cumin seeds  -  1 1/2 tsp 
.  Black pepper corns  -  1/2 tsp 
.  Urad dal  -  2 tsp 
.   bengal gram -  2 tsp 
.  Dry red Chillies  -  3 no 
.  Coconut  -  4 tblsp Grated 
.  Tamarind  -  1pinch 
.  coriander leaves  -  4 sprig
.  Mustard seeds  -  1 tsp
.  Oil -  3 tblsp 
.  Salt to taste 



Method:

1.  Dry roast cumin seeds, pepper corns, urad dal, bengal gram and dry red Chillies.  Keep it aside.
2.  Pour 2 tblsp oil in the pan.  Add roughly chopped onion ,tomatoes and garlic.
3.  After the veggies are cooked, add the mint leaves.
4.  In low flame stir it for 1 min until the mint leaves shrinks.  Switch off the flame.
5.  After it gets cooled , transfer it to mixer jar.  Add the roasted ingredients,  coconut,  tamarind,  coriander leaves and salt.
6.  Blend it well
7.  Heat the oil in the pan.  Add mustard seeds,  urad dal.  After it splutter add the chutney . Stir it for 1 min.
8.  Serve.



Pictorial :

             1)   Take a kadai.


          2)   Add cumin seeds, pepper corns,  urad dal, bengal gram,  dry red Chillies. 

     
           3)  Dry roast until golden brown. Keep it aside. 

            4)  Heat oil in the kadai.


          5)  Add onion, garlic, tomatoes.

          6) saute until it becomes soft.


          7)  Add mint leaves.


          8)    Stir for 1 min.


           9)    Transfer it to blender. 
  

 9)  Add roasted ingredients. 

          10)  Add coconut.


           11)   Add tamarind.


            12)  Add fresh coriander leaves and salt.


            13)   Blend well by adding little water.


            14)  Add oil,  mustard seeds, urad dal in a pan.


             15)  After it crackle, Add chutney and stir for 1min.



            16)   Serve.




Note:

1.  Do not overroast the ingredients. 
2.  Do not add too much of water to blend.
