Vegetable pulao/ Pulao recipe/ lunch box recipe

Vegetable pulao using coconut milk 

      
            Pulao is one of the recipe that can be made within short time.  There are varieties of pulao.  I cook this vegetable pulao very often for my kids lunch box.  They liked it very much .
            Varieties of rice can be used for pulao . Here i use normal rice. Whatever the rice,  pulao tastes too good.  I used coconut milk to it . It increases the taste of the pulao. I cooked it many times . Give it a try.  Sure,  you love it.



Ingredients :

  .   Rice  -  1cup ( approximately 200gms)
  .   Onion   -  1 big onion ( chopped lengthwise) 
   .   Green chillies  -  2 nos. 
   .   Curry leaves  -  1 sprig 
   .   Mix vegetables ( carrot,  beans,  potatoes,  peas,  soya chunks )- 1 1/2 cup 
    .    Ginger garlic paste  -  1 tblsp 
   .     Mint leaves  -  3 tblsp 
    .    Coriander leaves   -  to garnish 
    .    Cashew nuts  -   5 nos. 
    .     Coconut milk -1  cup 
    .     Salt to taste 
    .    Oil or ghee   -   2tblsp 

Dry spices:

   .  Cinnamon  -  2
   .  cloves  -  4
   .    Green cardomom   -  2
   .    Bay leaf   -  2
    .    star anise   -  1
    .     cumin seeds   -  1/2 tsp 
    .     Fennel seeds   -   1/2 tsp 

Method: 

    1.   Wash the rice and soak it for 1/2 an hour and drain it. 

    2.   Cut the vegetables ( 1 inch size ). 

    3.   soak the soya chunks in hot water. 

   4.    Heat the pressure cooker. Add oil or ghee . Add the dry spices and cashew nuts. 

   5.    After the spices splutters,  add the onion,  green chillies and curry leaves.  Saute for 3mins. 

   6.    Add ginger garlic paste.  Saute until raw smell goes out. 

    7.    Add the chopped vegetables,  soya chunks.  Saute for 3 more mins. 

    8.     Add mint leaves.  Saute for 1 min. 

   9.     Add 1 cup coconut milk and 1 cup water for 1 cup rice .

   10.  Add salt.  When the water tends to boil,  add the soaked rice.  Check the salt and cover the pressure cooker. 

   11.  Wait for 2 whistles and switch off the flame .

  12.  Serve with raita.

            4)  Heat  oil or ghee in the pressure cooker .


            5)  Add dry spices,  cashew nuts. 


            6)  Add onion,  green chillies and curry leaves. 


           7)  Add ginger garlic paste. Saute and add veggies and mint leaves to it.sait 


            8)  Add coconut milk. 


            9)   Add water,  salt and rice. 


            10)  Pressure cook for 2 whistles. 

   
             11) Garnish with coriander leaves. 


            12)   Serve with raita. 



Note: 

1.  if you use basmati rice instead of normal rice,  for 1 cup rice,  add 2 cup water(coconut milk & water )  .  pressure cook for 1 whistle.
