Cauliflower kulambu recipe with step by step pictures
Cauliflower kulambu is a south-indian especially tamilnadu recipe. This kulambu recipe was taught by my mom. She usually make chicken kulambu by this method. I like it very much. I use cauliflower to make this kulambu instead of chicken. I believe that cauliflower is a better substitute for chicken.
This kulambu is served with rice as well as a sidedish for chapathi, dosa, idli. I use pressure cooker to make it very quick. You can cook it in a kadai also.

Ingredients :
. Cauliflower - 1 medium sized (chopped into florets)
. Shallots(small onion) - 15 nos. ( i used more than 20 as it is too small)
. Tomato - 1 big sized (roughly chopped)
. Garlic cloves - 6-7 nos.
. Ginger - 2 inch piece
. Curry leaves - 1 sprig
. Coriander leaves - 4 sprig
. Coconut - 3 tblsp (grated)
. Turmeric powder - 1/2 tsp
. Oil - 2 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Kulambu powder - 1 tblsp
. Chicken masala - 1 tblsp (optional)
. Salt to taste
Method :
1. Take cauliflower. Chop into florets. Soak it in hot water for 5 mins along with turmeric powder. Strain it from water. Keep it aside.
2. Heat oil. Add shallots, tomato, garlic and ginger. Saute until onion becomes translucent and tomato become mushy.
3. Add fresh curry leaves and coriander leaves. Saute for few secs. Add grated coconut. Saute for a min. Add spice powder. Mix well for few secs. Switch off the flame. Let it cool.
4. Transfer it to mixer jar. Grind to a smooth paste by adding little water.
5. Heat oil in a pressure cooker. Add mustard seeds and urad dal. After it splutters, add curry leaves.
6. After it sizzle, add ground paste and cauliflower. Mix well. Add salt and 2 cups of water. Pressure cook for 1 whistle.
7. Cauliflower kulambu is ready to be served with rice.

3) Soak the florets in hot water for 5 mins along with turmeric powder.
4) Strain the florets. Keep it aside.
5) Heat oil in a kadai.
6) Add shallots, tomato, ginger and garlic.
7) Saute until onion becomes translucent and tomato becomes mushy.
8) Add fresh curry leaves and coriander leaves.
9) Saute for few secs.
10) Add grated coconut.
11) Saute for a min.
12) Add spice powder.
13) Mix well for few secs. Switch off the flame.
14) Let it gets cooled. Transfer it to the mixer jar.
15) Grind it to a smooth paste by adding little water.
16) Heat oil in pressure cooker.
17) Add mustard seeds and urad dal.
18) After it splutter and turns to golden brown, add curry leaves.
19) After it sizzle, add ground paste.
20) Add cauliflower.
21) Mix well. Add salt.
22) Add 2 cups of water.
23) Pressure cook for about 1 whistle.
24) Cauliflower kulambu is ready to be served.
Note :
1. Still it is cauliflower, i cooked for only one whistle. If it is chicken, then you have to cook for about 4-5 whistles.
2. I have added chicken masala to this recipe to get non-veg aroma. But it is optional. You can add kulambu powder alone.
