Brinjal pepper fry recipe with step by step pictures
Brinjal pepper fry is a sidedish recipe for rice. It goes well with curd rice, sambar rice or any other variety rice. I usually make chicken in this method and thought of doing any vegetables and i made it with brinjal. It came out soo good and it becomes my husband's one of the favorite dishes. Ingredients :
. Brinjal - 6 (chopped lengthwise )
. onion - 1 big onion ( chopped lengthwise )
. curry leaves - 1 sprig
. Turmeric powder - 1/2 tsp
. Kulambu powder - 1 1/2 tblsp
. Pepper powder - 1 tsp
. Salt to taste
. Oil - 2 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Bengal gram - 1 tsp
Method :
1. Chop the brinjal and put in water to prevent from discolouration.
2. Heat oil in a kadai. Add mustard seeds, urad dal and bengal gram. After it crackle, add chopped onion, curry leaves. Saute until onion becomes translucent.
3. Add chopped brinjal and saute for 1 min. Add turmeric powder , kulambu powder and salt. Mix well.
4. Cover with lid and cook for 10 minutes in low flame. Stir in between.
5. Add pepper powder. Toss well. Cook for 2 min. Serve.

7) Mix well. Add salt.
8) Mix well. Cover and cook for 10 min in low flame. Stir in between.
9) Add pepper powder . Toss well.
10) cook for 2 minutes. Serve.
