Mixed vegetable gravy -sidedish for chapathi

Mixed vegetable gravy recipe with step by step pictures 


             Mixed vegetable gravy is a sidedish for chapathi,  dosa,  ldli,  parota,  naan,  roti.  Every vegetable has its own taste.  When it is combined in a single dish,  then it tastes too yummy and healthier too. I have used carrot,  beans, potato and chick pea in this recipe,  you can add your favorite vegetables  like cauliflower,  peas,  soya chunks etc, . Try this recipe and let me know.

Ingredients  :

.  onion - 2 medium sized (roughly chopped)
.  tomato - 2 small sized(roughly chopped )
.  ginger - 2 inch piece
.  Garlic pods - 6
.  Green chilli - 1
.  coriander leaves - 6 sprig
.  mixed vegetables ( carrot,  beans,  potato,  chick pea)   -  2cup
.  Cashew nuts - 8
.   Turmeric powder - 1/2 tsp
.   Chilli powder  - 1tsp
.  Garam masala  - 1 tblsp
.  Cumin seeds - 1tsp
.  Oil - 2tblsp
.  Salt to taste

Method  :

     1.  Heat oil in a pan.  Add chopped onion,  tomatoes,  green chilli,  ginger and garlic.  Saute until it becomes soft. 
      2. Add coriander leaves and saute for 10 secs.  Let it cool. Tranfer to mixer jar, add cashews and grind to a smooth paste.  Keep it aside. 

     2.  Cook  the chopped vegetables (carrot, beans,  potatoes and chick pea) in hot water. Keep it aside .

     3.  Heat oil in a kadai. Add cumin seeds.  After it crackle,  add ground paste. saute for 1 min.  Add turmeric powder , chilli powder and garam masala.  Mix well. 

     4.  Add vegetables and water.  Mix it.  Add salt.  Cook for 10 min in medium flame or until oil separates.  Switch off the flame.  Serve. 


Pictorial  :

         1) soak cashew nuts in hot water for 10 min. 


        2) Heat oil in a pan,  add chopped onion, tomatoes,  green chilli,  ginger and garlic.

       8) cook the vegetables in hot water until it gets half cooked. 


       9) Heat oil in a kadai.  Add cumin seeds .


      10) After it splutters,  add the ground paste. 


       11) Saute for 1 min.  Add turmeric powder,  chilli powder and garam masala. 


       12) Mix well.  Add the vegetables. 


      13) Mix well.  Add 1Cup of water .


      14) Add salt. 


      14) Cook for 10 min in medium flame or until oil separates. 


      15) switch off the flame.  Serve. 

Note : 

      I have already pressure cooked the chick pea and added to this recipe.
