Vegetable white kurma recipe with step by step pictures
Usually vegetable kurma is made with many spice powders and it is very colourful and appealing. I always made vegetable kurma with spice powders. But, when i went to a restaurant, they serve this white kurma as a sidedish for poori. It is not appealing as it is white and plain. But I tasted it, i just love this creamy white kurma. I thought of making it in my home and made it. In this recipe, i have used potato, carrot and fresh peas. You can add other vegetables like beans, cauliflower. Give it a try, you just love it.

Ingredients :
. Potato, carrot - 1 cup ( chopped into small cubes)
. fresh peas - 1/2 cup
. Onion - 1 small onion (finely chopped)

. Corn flour - 1 tblsp
. Oil - 2 tblsp
. Fennel seeds - 1 tsp
. bay leaf - 2
. coriander leaves - 1 tblsp chopped
To grind:
. coconut - 1/2 cup grated
. Cashew nuts - 6
. cumin seeds - 1 tsp
. Cinnamon - 2
. cloves - 4
. cardamom - 1
. green chilli - 2
. Ginger - 1 inch piece
. Garlic cloves - 4
Method :
1. Take the ingredients under to grind. Transfer to mixer jar. Grind to smooth paste.
2. Cook potatoes and carrots with 1 cup of water.
3. Heat oil in a kadai. Add fennel seeds, bay leaf. After it splutters, add onion. Saute for a min. Add the ground paste. Add cooked vegetables and fresh peas. Mix well.
4. Add salt and 1 cup of water. Cook for 5 min.
5. Mix corn flour with 2 tblsp of water and pour the mixture into kurma. It thickens the kurma. Cook for 5 min.
6. Switch off the flame. Add chopped coriander leaves. Serve.

Note :
you can add 1 tsp of garam masala to the kurma. It is optional.
