Brinjal thokku recipe with step by step pictures
Brinjal thokku is a south indian accompaniment for rice and it is also a sidedish for chapathi. It is a simple recipe and very easy to cook. We dont want to grind anything. It is a tangy recipe and healthy too. I dont used any masala to this recipe. If you want, you can add some garam masala powder to it. But it tastes yummy without any masala.

Ingredients :
. Brinjal - 10 medium sized (chopped into cubes)
. Onion - 1 big onion (finely chopped)
. Tomato - 4 medium sized (chopped lengthwise)
. Turmeric powder - 1/2 tsp
. Chilli powder - 1 1/2 tsp
. Coriander powder - 2 tsp
. Cooking oil - 1 1/2 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Bengal gram dal - 1 tsp
. Salt to taste
. Gingelly oil/ sesame oil - 1 tblsp
. Coriander leaves to garnish.
Method :
1. Heat oil in a kadai. Add mustard seeds. After it splutters, add urad dal and bengal gram dal. Let it become golden brown.
2. Add chopped onion. Saute until it becomes soft. Add chopped tomatoes. Saute for few secs. Add salt. Saute until it becomes mushy.
3. Add turmeric powder, chilli powder and coriander powder. Saute for a min. Cook until oil separates.
4. Add chopped brinjal. Mix well. Cook until it changes colour. Add 1/2 cup of water. Cover and cook in mediun flame until oil oozes out.
5. Add sesame oil. Cook for a min. Finally add chopped coriander leaves. Switch off the flame. Serve.

13) Add 1/2 cup of water.
14) cover and cook in medium flame until oil oozes out.
15) Add 1 tblsp of sesame oil. Cook for a min.
16) Finally add chopped coriander leaves. Switch off the flame.
17) serve.
Note :
Adding sesame oil balances the spice and gives nice aroma and taste.
