Carrot rice recipe with step by step pictures
Carrot rice is a south Indian lunch recipe. Kids like carrot very much and It has many nutritional benefits. It is ideal for kids lunch box. It is colourful and healthy recipe. My mom give carrot rice very often in my school days. It is a quick recipe that you can make it in your busy morning for lunch boxes. It is a basic version of carrot rice. I have used carrots alone in it. You can add Some frozen peas or corn to it, if you wish. Hope you give it a try and let me know.

Ingredients :
. carrots - 3 medium sized (grated)
. Boiled rice - 2 cup
. onion - 1 small onion( finely chopped )
. oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Bengal gram - 1 tsp
. curry leaves - 1 sprig
. Green chillies - 2 (slited)
. salt to taste
. Sesame oil - 1 tblsp
Method :
1. Peel the skin and grate the carrots. Keep it aside. Heat oil in the kadai. Add mustard seeds ,urad dal and bengal gram dal.
2. After it splutters, add curry leaves, green chillies and chopped onion. Saute until it becomes translucent .
3. Add grated Carrots. Saute for a min.
4. Add 1/2 tsp of salt and drizzle 2 tblsp of water. Mix well. Cover with lid and cook for 5 min in low flame. Stir in between to avoid the veggies sticking to the bottom of the kadai.
5. Switch off the flame and add cooked rice and required salt. Toss it well. Add sesame oil and mix well. Carrot rice is ready to serve.

3) let it crackle and become golden brown.
4) Add chopped onion, green chillies and curry leaves.
5) Saute until onion becomes translucent.
6) Add grated carrots.
7) Saute for a min.
8) Add 1/2 tsp of salt.
9)Drizzle 2 tblsp of water. Mix well and cover with lid. Cook for 5 min in low flame. Stir in between to avoid the veggies sticking to the bottom of the kadai.
10) Switch off the flame. Add cooked rice .
11) Add required salt.
12) Mix it well.
13) Add sesame oil.
14) Toss well. Carrot rice is ready.
15) Serve.
Note :
1. I usually switch off the flame before adding rice, because i am adding boiled rice and it is warm enough. If you are using the leftover rice or the rice which is completely cool, then switch off the flame at the end after adding rice and sesame oil.
2. Adding sesame oil gives you nice aroma and taste to the recipe. Do not skip that.
3. Adding sesame oil regains the moisture and the rice do not get dry when you packed it for lunch.
