Egg bhurji / egg podimas

Egg bhurji recipe with step by step pictures 


               Egg bhurji is an indian recipe that is served as a sidedish in non-vegetarian meal.  It is very tasty and yummy.  It is very easy to cook and it dont take much time like vegetables.  It can be served with chapathi or as a filling for frankie.  Egg eaters love this recipe.  Egg can be srumbled alone and tastes good but when it combined with onion,  tomatoes and masala, it tastes amazing.

Ingredients  :

.  Eggs -  4
.  Onion -  2 big onion (finely chopped) 
.  Tomato -  2 small sized (finely chopped) 
.  Green chilli - 2 (finely chopped) 
.  Curry leaves -  1 sprig 
.  Turmeric powder -  1/2 tsp 
.  Chilli powder -  1 tsp 
.  Garam masala -  1/2 tsp 
.  Salt to taste 
.  Oil -  1 tblsp 
.  Mustard seeds -  1 tsp 
.  Cumin seeds -  1 tsp 
.  Urad dal -  1 tsp 

Method : 

            1. Crack open the eggs in a bowl.  Beat well and keep it aside. 
            2. Heat oil in a kadai.  Add mustard seeds and cumin seeds.  After it crackle,  add urad dal.  Let it become golden brown.  
            3.  Add chopped onion, green chillies and curry leaves.  Saute until  onion becomes soft.  Add chopped tomatoes. Saute for a min. 
           4. Add turmeric powder,  chilli powder and garam masala powder.  Saute for a min.  Add salt.  Saute well. 
          5. Add eggs.  Mix it well.  Cook in medium flame.  Stir continuously.  Cook until eggs are fully srumbled.  Egg bhurji is ready.  Serve. 


Pictorial : 

           1) crack open the eggs in a bowl. 


           2) Beat the eggs well. Keep it aside.

          5) Let it become golden brown. Add finely chopped onion,  green chillies and curry leaves. 


         6) Saute until onion becomes soft and translucent. 


         7) Add chopped tomatoes. Saute for a min. 


          8) Add turmeric powder, chilli powder and garam masala powder. 


         9) saute for a min. Add salt.  Saute for another min. 


         10) Add eggs.  


         11) mix it well. 


         12) cook in medium flame.  Stir continuously until the eggs are fully srumbled. 


          13) Egg bhurji is ready.  Serve.
