Carrot Potato egg fry recipe with step by step pictures 


                 Carrot Potato egg fry is a sidedish recipe for rice.  Carrot and potato is a very good combination.  I usually make poriyal with these two vegetables.  But my daughter likes egg very much.  She likes to eat egg in her daily food.  So i try to include egg in poriyals.  It tastes yummy.  
              In south-indian poriyal recipes,  we use coconut as a topping.   In this recipe,  i replace grated coconut with eggs. Hope you like it.

Ingredients :

.  Carrot -  3 medium sized
.  Potato -  3 medium sized
.  Eggs -  2 
.  Onion -  1 big onion (finely chopped) 
.  Turmeric powder  -  1/2 tsp 
.  Chilli powder -  1 tsp 
.  Coriander powder -  1 tsp 
.  Oil -  1 tblsp 
.  Mustard seeds -  1 tsp 
.  Urad dal -  1 tsp 
.  Salt to taste 
.  Salt &  pepper for eggs 


Method : 

           1. Peel the skins of carrot and potatoes.  Chopped into small cubes.  Crack open the eggs.  Add salt and pepper.  Beat well.  Keep it aside. 

         2. Heat oil in a kadai.  Add mustard seeds.  After it crackle,  add urad dal.  Let it become golden brown.  Add chopped onion.  Saute until it becomes soft. 

        3. Add chopped carrots and potatoes.  Saute for 2 min.  Add turmeric powder,  chilli powder and coriander powder.  Saute for a min.  Add salt.  

       4. Add 1/2 cup of water.  Cover and cook in medium flame for 8 - 10 mins or until vegetables are cooked and water dries off. 

       5. Add beaten eggs.  Mix well.  Cook by stirring continuously until the eggs are fully scrumbled.  Carrot Potato egg fry is ready to be served. 


Pictorial  : 


            1) wash and peel the skin of carrots and potatoes.

         13) In the mean time,  crack open the eggs in a bowl. 


         14) Add salt and pepper. 


          15) Beat well. 



          16) Pour this beaten eggs into cooked carrots and potatoes. 


          17) Mix well. 


          18) Cook by stirring continuously until the eggs are completely scrumbled. 


          19) Carrot Potato egg fry is ready to be served.  


Note : 

           If you are a vegetarian and dont like to add eggs, replace it with some grated coconut.
