Potato brinjal bhaji recipe with step by step pictures
Potato brinjal bhaji is a simple sidedish recipe for chapathi and also can be served as an accompaniment for rice. Whenever i get bored of kurmas, i go for vegetable sabjis. This potato and brinjal bhaji is a tangy and tasty recipe. This dont take much time to cook. Just make Tomato thokku and add vegetables to it. I have added sambar powder to this recipe. If you like, you can add curry powder to it which also tastes yummy.

Ingredients :
. Potato - 2 medium sized
. Brinjal - 6 medium sized
. Onion - 1 big onion (finely chopped)
. Tomato - 3 medium sized (finely chopped)
. Turmeric powder - 1/4 tsp
. Chilli powder - 2 tsp
. Coriander powder - 1 tblsp
. Sambar powder - 1 tblsp
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Salt to taste
Method :
1. Chop the vegetables.
2. Heat oil in a kadai. Add mustard seeds and urad dal. After it crackle and turned to golden brown, add chopped onion.
3. Saute until transparent. Add tomatoes. Add turmeric powder and salt. Saute until mushy.
4. Add spice powders. Saute until oil separates. Add vegetables. Mix well. Add 1/2 cup of water.
5. Cover and cook until done. Serve.

5) Saute until it becomes translucent.
6) Add chopped tomatoes.
7) Saute for a min.
8) Add turmeric powder and salt.
9) Saute until it becomes mushy.
10) Add chilli powder, coriander powder and sambar powder.
11) Saute until oil separates.
12) Add chopped Potato and brinjal.
13) mix well. Saute for a min.
14) Add 1/2 a cup of water.
15) Cover and cook in low flame for 10 mins or until oil separates.
16) Serve.
Note :
1. Adding gingelly oil gives you better taste.
2. You can add some grated coconut at the end.
