Arachu vitta sambar recipe with step by step pictures
Sambar is one of the famous south-indian recipe. There are many ways for making sambar. This arachu vitta sambar is one of the tastiest sambar with freshly ground masala. Usually, sambar is made with sambar powder. But this freshly ground sambar powder enhances the taste of it. You can just dry roast few ingredients and grind it to fine powder and add it to the sambar. Give it a try and sure you never use sambar powder. This freshly ground powder can be stored in air tight container and keep it in refrigerator and use by 3 weeks.
In this, i have made fresh spice powder to make sambar two times. I have added half of it and store the rest in refrigerator for further use.

Ingredients :
To dry roast:
. Chana dal - 1 tblsp
. Urad dal - 1 tblsp
. Coriander seeds - 2 tblsp
. Dry red chillies - 4
. Fenugreek seeds - 1 tsp
. Curry leaves - 1 sprig
. Grated coconut - 2 tblsp
To make sambar:
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Onion - 1 medium sized (sliced)
. Curry leaves - 1 sprig
. Tomato - 1 medium sized ( sliced)
. Asafoetida/ hing - 1/2 tsp
. Vegetables - carrot, french beans, flat beans ( chopped into 1 inch size)
. Salt to taste
. Toor dal - 1 cup
. Turmeric powder - 1 tsp
. Tamarind water - 2 tblsp
Method :
1. Dry roast the ingredients given under to roast. Let it cool and grind to fine powder. Keep it aside.
2. Soak tamarind in hot water for 5 mins. Make tamarind water. Keep it aside.
3. Take toor dal in pressure cooker along with turmeric powder. Pressure cook for 4 whistles. Mash the dal. Keep it aside.
4. Heat oil in a kadai. Add mustard seeds, urad dal. After it crackle, add onion, curry leaves, hing. Saute for a min.
5. Add tomato. Saute for a min. Add chopped veggies and salt. Saute for 2 - 3 mins. Add water and cook for 10 mins.
6. Add freshly ground spice powder, mashed dal and tamarind water. Mix well. Cook for 5-8 mins. Arachu vitta sambar is ready.

Take the ingredients given under to roast.
Dry roast the dal and then add coriander seeds, roast until aroma comes out. Keep the flame in low.
Add curry leaves, dry red chillies and fenugreek seeds. Roast for few secs.
Add grated coconut.
Roast for a min.
Let it cool and transfer to mixer jar.
Grind to fine powder. Keep it aside.
Pressure cook toor dal with turmeric powder and 2 cups of water for 4 whistles.
Mash it with a laddle(mathu). Keep it aside.
Soak tamarind in hot water for 5 mins.
Make tamarind water. Keep it aside.
Chop the veggies.
Heat oil in a kadai.
Add mustard seeds, urad dal.
After it splutters and turns to golden brown, add chopped onion, curry leaves and hing.
Saute for a min.
Add tomato. Saute for few secs.
Add chopped veggies.
Saute for a min.
Add salt. Saute for 2 - 3 mins.
Add 2 cups of water.
Cook for 10 mins.
Add mashed dal, ground spice powder and tamarind water.
Mix it well.
Cook for 7-8 mins. Switch off the flame.
Tasty arachu vitta sambar is ready to be served.
