Homemade kulambu powder recipe with step by step pictures
In Tamilnadu, kulambu is the major dish that is served with steamed rice in most of the homes. For making kulambu, we need the kulambu powder or masala. We can freshly roast the whole spices and grind to mix with kulambu but it takes much time. Want to cook kulambu quickly, we need instant kulambu powder.
In most of the homes, we prepare homemade kulambu powder which is very tasty, healthy, clean and low cost compared to the store bought spice powders. We make in bulk and stored in air-tight containers for upto 1 year. This kulambu powder is a multi purpose spice powder that you can use not only for kulambu but also for gravies, sambar, thokku. Give it a try. It is very easy to make in home. I made it in small quantity and i use my mixer jar alone.

Ingredients :
To make 200gms (approximately) of kulambu powder :
. Dry red chillies - 35-40 nos.
. Coriander seeds - 1 cup
. Chana dal - 2 tblsp
. Toor dal - 2 tblsp
. Cumin seeds - 2 tsp
. Black pepper - 2 tsp
. Asafoetida - 1 tsp
. Curry leaves - 2 sprig
Method :
1. Dry roast the ingredients one by one by keeping the flame to low. Start by dals as it takes few mins to get roasted.
2. Roast coriander seeds until you get the aroma. Roast cumin and black pepper for few secs.
3. Add hing in kadai. Leave a sec. Remove it after colour changes. Roast curry leaves until crisp.
4. Finally roast dry red chillies for 3 mins. Transfer the ingredients to a plate. Let it cool in room temperature.
5. Transfer the ingredients to mixer jar. Grind to fine powder. Make it in batches. Keep it in plate as it is warm due to grinding.
6. After it completely gets cooled, store it in air tight container.

Take the ingredients to roast
Keep the flame to low. Start by roasting dals
Roast until dals turns to golden brown. It takes few mins as the flame is in low. Keep stiring it to get roasted evenly.
Remove dals to a plate. Roast coriander seeds until you get nice aroma
Remove coriander seeds. Roast cumin seeds and black pepper. It takes few secs only.
Roast curry leaves until crisp
Add hing to warm kadai. Give a quick stir and remove when golden brown.
Roast dry red chillies
Remove before it gets burnt
Tranfer all the ingredients to a plate. Let it cool in room temperature.
Transfer to the mixer jar..
Grind to fine powder. Make it in batches.
Cool the powder in a plate as it is warm due to grinding.
Kulambu powder is ready. Store it in air tight container after it gets cooled completely.
