Methu vadai recipe with step by step pictures 



                Medhu vadai is a traditional snack of tamilnadu.  It is a main dish that is cooked ( without onion) as an offering for god in our festive meals. Today i made it as a snack.  It is little tricky that the vadai has a hole at the centre and i tried very hard to make the vadais in round shape.  My MIL taught me this recipe and she make this vadai often and it is one of the favorite snack for my husband. 

                 It is a very healthy snack especially for girl kids,  as it is made with urad dal ( ulundu) .  Grinding urad dal must had some patience as it needs little concentration for adding water while grinding.  Actually it dont need water and we have to add it a very little as not to struck the mixer grinder.  You can grind it in wet grinder too to get more fluffy batter.  If you add more water then the vadai sucks more oil while frying.  So be careful while making batter.

Ingredients   : 


For 15- 20 (medium sized)  vada :

.  Whole urad dal/ mulu ulundu(without skin)   -  1 cup
.  Onion  -  1 medium sized ( finely chopped) 
.  Green chilli  -  2 (finely chopped) 
.  Ginger  -  1 inch piece ( finely chopped) 
.  Curry leaves   -  3 tblsp (finely chopped) 
.  Coriander leaves   -  3 tblsp ( finely chopped ) 
.   Asafoetid / hing  -  1 tsp
.   Salt to taste
.   Oil for frying


Method  : 


           1. Soak urad dal for 3 - 4 hours.  Rinse and drain the water.  Grind it to a fluffy batter by drizzling very little water.  

          2. Finely chop onion,  green chilli, ginger, curry leaves, and coriander leaves. Add it to batter along with salt and hing. Mix well. 

         3. Heat oil in a kadai.  Dipp your hand into water to grease .  Take batter and make a hole at the center.  Gently drop it to medium heat oil.  

        4. Cook for a min.  Flip it using a laddle.  Cook until both sides becomes golden brown.  Strain the vadais.  Your tasty ulundu vadai is ready.

                  Take a cup of urad dal


Soak it for 3 - 4 hours


Rinse and drain the water


Grind it smooth and fluffy batter consistency by drizzling very little amount of water (for 1 cup of urad dal,  1 tblsp of water is more than enough) 


Finely chop onion,  green chilli, ginger, curry leaves and coriander leaves 


Add it to batter


Add hing and salt


Mix well


Dip your hand in water to grease,  take batter and make it a hole with your thump (meantime heat oil in kadai for frying) 


Gently drop the batter ( turn the stove to medium low) 


Drop one by one


When it is golden brown,  flip to another side


Cook until both sides becomes golden brown ( cook in medium flame,  otherwise it will get burnt) 


Remove it to a plate


Serve as such or with Coconut chutney or sambar
