Kotthu parotta / egg kotthu parotta / curried shredded parotta

Kotthu parotta recipe with step by step pictures 


                 Kotthu parotta is a very easy and simple to cook recipe with the leftover parotta (indian flat bread)  and leftover salna ( sidedish for parotta) .  It is a tasty and finger licking recipe that you can cook within 10 mins.  Today i have made kotthu parotta with eggs.  You can make kotthu parotta without eggs or you can make chicken kotthu parotta with leftover fried chicken. 

                  This is one of my favourite dish from street shops.  But due to the quarantine,  i have made parotta at home and i have some leftover parotta at my hand and so i dis this kotthu parotta to finish the leftovers.  It tastes too yummy.  Do try at your home and let me know how it turns out to you.  To make this kotthu parotta,  all you need is parotta and salna.  I have already posted the recipes.  You can check out the recipes through the links given below :

Ingredients   : 


.   Leftover parotta / roti  -  3 
.   Salna  -  1/2 cup
.   Eggs  -  2 
.   Onion  -  1/2 medium sized (chopped lengthwise) 
.   Curry leaves   -  1 sprig
.   Tomato  -  1/2 small sized ( finely chopped) 
.   Coriander leaves   -  1 tblsp (finely chopped) 
.   Oil  -  1 tblsp 
.   Pepper powder  -  1 tsp
.   Salt to taste 


Method  : 


              1. Tear or shred the parottas into 1 inch pieces.  Keep it aside. 

             2. Heat oil in a kadai.  Add onion and curry leaves.  Saute until translucent.  Add tomato and coriander leaves.  Saute until mushy. 

           3. Crack open two eggs.  Add salt and pepper.  Scramble the eggs well.  

          4. Add shredded parottas and salna.  Mix it well and saute until it gets dried and mixed with the eggs.  Kotthu parotta is ready.


Pictorial   : 


                Tear or shred the parottas into 1 inch pieces.  Keep it aside


Heat oil in a kadai


Add chopped onion and curry leaves.  Saute until translucent 


Add chopped tomato and coriander leaves 


Saute until mushy


Add two eggs


Add salt and pepper ( parotta and salna has salt and spice itself and so add salt and pepper only for the eggs) 


Scramble the eggs well


Add shredded parottas


Add salna to it


Mix it well and scramble it until it gets dried and mixed with the eggs


Kotthu parotta is ready to be served.  Serve it with salna or raita
