Cabbage kofta curry (north-indian style)  recipe with step by step pictures 


               Cabbage kofta curry is a delicious and tangy sidedish recipe for chapathi, naan, parathas.  Cabbage kofta curry made in south-indian style served as an accompaniment for rice.  It is similar to paruppu urundai kulambu.  Soon will post that recipe too.  This north-indian style Cabbage kofta curry is similar to gravies.  It doesn't have onion and garlic in it.  It is simply a no onion no garlic recipe. Ingredients   : 


To make dumplings  :

.   Cabbage   -  1 cup (shredded) 
.   Gram flour  -  3/4 cup
.   Chilli powder   -  1 tsp
.   Turmeric powder   -  1/2 tsp
.   Salt to taste
.   Hing/ asafoetida  -  1/4 tsp
.   Coriander leaves   -  2 tblsp ( finely chopped) 
.   Oil for frying 

To make gravy  : 

.   Tomato  -  3 medium sized (roughly chopped) 
.   Ginger  -  1 inch piece (chopped) 
.   Green chilli  -  1
.   Oil  -  1 tblsp
.   Cumin seeds  -  1 tsp
.   Chilli powder   -  1 tsp
.   Coriander powder   -  1 tsp
.   Gram flour  -  2 tblsp
.   Curd  -  2 tblsp
.   Kasuri methi  -  2 tsp
.   Salt to taste
.   Cashew nuts  -  10
.   Coriander leaves to garnish 

Method   : 


            1. Take shredded Cabbage.  Add the ingredients given under for dumplings except oil.  Mix well.  Make small balls out of it.  

          2. Heat oil for frying.  Drop the prepared dumplings one by one.  Cook in medium to low flame until all the sides becomes golden brown.  It takes 5- 6 mins. 

       3. Strain the dumplings.  Keep it aside.  

       4. Take tomato, ginger and green chilli in a mixer jar.  Grind it to a smooth puree. 

       5. Heat oil in kadai.  Add cumin seeds.  After it sizzle,  add chilli powder and coriander powder.  Give it a mix.  Add ground tomato puree. 

       6. Add salt and Cook until oil separates.  Add gram flour.  Mix well and cook for 2 mins.  Add curd.  Cook for a min.  Add water and mix well. 

        7. Cook for 5 mins.  Add kasuri methi and fried dumplings.  Cook for 3 mins. 

        8. Soak cashews in hot water for 10 min.  Grind it to smooth paste.  Add it to the curry.  Cook for 2 mins.  Turn off the flame.  Cabbage kofta curry is ready.

             Take shredded cabbage in a bowl


Add gram flour, chilli powder, turmeric powder, salt, hing, Coriander leaves 


Mix well without adding water ( it must be little thick enough to make dumplings, if needs add more gram flour) 


Make dumplings 


Heat oil for frying 


Drop the dumplings one by one


Cook in medium to low flame until all the sides becomes golden brown.  It takes 5 - 6 mins


Strain the dumplings.  Keep it aside


Take tomato, ginger and green chilli in a mixer jar


Grind it to puree


Heat oil in a kadai


Add cumin seeds


After it sizzle,  add chilli powder and coriander powder.  Give it a quick mix ( do not burnt the spices powder ) 


Add tomato puree


Add salt and Mix well


Cook until oil separates


Add gram flour


Mix well and cook for 2 mins


Add curd


Mix and cook for a min


Add 1 cup of water.  Mix well


Cook for 5 mins


Add kasuri methi


Add fried dumplings.  Cook for 3 mins


Soak cashews in hot water for 10 mins


Grind it to smooth paste


Add it to the curry


Cook for 2 mins.  Turn off the stove


Cabbage kofta curry is ready to be served
