Samosa recipe with step by step pictures
Samosa is a north-indian snack recipe which is famous in south-india too. It is very commonly available in most of the street shops. My husband bought it atleast once in a week. We like it very much. I thought it was a tough process to make samosa at home. And i wanted to try it for a very long time. Due to this quarantine, i got a chance to make it at home. And i made it today.
After i did it, i realize that making samosa at home is not a tough process but it takes little time more than for a Bajji or Bonda. But it came out too good for the first time itself. Do try at your home and sure you like it. Check out the samosa recipe below with step by step pictures.

Ingredients :
For stuffing :
. Oil - 2 tsp
. Cumin seeds - 1 tsp
. Onion - 2 medium sized (finely chopped)
. Turmeric powder - 1/2 tsp
. Chilli powder - 2 tsp
. Salt to taste
. Potato - 3 ( boiled and mashed)
. Coriander leaves - 2 tsp (finely chopped)
. Chaat masala - 2 tsp
For samosa :
. Maida / all purpose flour - 2 cup
. Salt - 1 tsp
. Sugar - 1 tsp
. Oil - 1 tblsp
. Ajwain / omam - 1 tsp
. Oil for frying samosa
Method :
1. Take maida. Add salt, sugar, oil and ajwain. Crumble it well. Add water and knead it to stiff dough. Rest it for 15 mins.
2. Heat oil in a kadai. Add cumin seeds. After it sizzle, add onion. Saute until translucent. Add turmeric powder, chilli powder and salt. Saute for a min.
3. Add mashed potatoes. Mix well and cook for 2 mins in low flame. Add chaat masala and coriander leaves. Mix it well. Switch off the flame. Let it cool.
4. Take a dough ball. Dust with flour. Flatten it vertically. Cut it into two halves. Take one half. Grease with a drop of water on straight side.
5. Overlap it to make a cone shape. Fill it with the prepared stuffing. Apply a drop of water on curved side. Seal it to make a samosa. Similarly make all the samosa.
6. Heat oil for frying. Drop the samosa into it. Cook in low flame. Flip the samosas to cook evenly on both sides. Cook until golden brown. It will take 5 - 6 mins. Strain the samosa. Serve with some ketchup.

Take maida in a mixing bowl
Add salt, sugar, oil and ajwain seeds
Crumble the flour until everything mix well ( do not skip this step, crumbling the flour gives the crispy texture to the samosa)
Add little water and knead the flour to make a stiff dough. Rest it for 15 mins
Heat oil in a kadai
Add cumin seeds
After it sizzle, add finely chopped onion. Saute until translucent
Add turmeric powder, chilli powder and salt
Saute for a min
Add boiled and mashed potatoes
Mix well. Cover with lid and cook for 2 mins in low flame
Add chaat masala and coriander leaves
Mix well. Switch off the flame. Let it cool
Knead the dough and take a dough ball. Dust with little flour
Flatten it using rolling pin in vertical side
Cut it into two halves
Take one half. Apply a drop of water on the straight side
Overlap it to make a cone
Fill it with the prepared stuffing
Apply a drop of water on curved side. Seal it to make a samosa
Similarly make all samosa
Heat oil for frying ( do not overheat. It must be warm)
Drop the samosa into it
Similarly drop one by one
Cook in low flame for atleast 5 - 6 mins. Flip it to cook evenly. Cook until it becomes golden brown
Strain the samosa
Tasty samosa is ready. Serve it with some ketchup.
