 Ghee mysore pak recipe with step by step pictures



             Ghee mysore pak is a traditional south-indian sweet. It is rich in taste and just melts in mouth. It is a easy to cook sweet and tastes amazingly great. It needs only few ingredients that is easily available in our kitchen. Still it is a festive season, I have been trying many sweets and savouries. This ghee mysore pak is one of my favorites and sure this recipe never gone fail. Just follow the tricks and tips to get soft mysore pak, then you won't buy mysore pak in stores.

Ingredients  :


.  Gram flour  -  1 cup
.  Ghee  -  3/4 cup
.  Oil  -  1/4  cup + 2 tblsp  ( I have used groundnut oil) 
.  Sugar  -  1 cup
.  Water  -  1/2 cup 


Method  :


            1.  Grease the pan in which you are going to pour the mixture. Keep it aside. 

           2.  Take ghee and oil in a bowl. Place it over low flame. Wait for a min just to melt the ghee. Turn off the flame. 

          3. Take gram flour in a bowl. Add half of the ghee and oil mixture to gram flour. Mix well without any lumps. Keep it aside. 

         4. Take sugar in a kadai. Add water to it. Mix well. Place it over flame. Cook until you get one string consistency. 

         5. Pour the gram flour mixture into sugar syrup. Mix well until it combines well. It becomes forthy. Stir continuosly . 

         6. Add half of the remaining ghee and oil mixture to it. Mix well until it combines. Again add the remaining ghee and oil. 

        7. Keep stiring until it gets thickened and don't stick to the kadai. It takes atleast 15 - 20 mins for the whole process. 

         8. When you get the right consistency, immediately pour it without delay into the pan that we have greased with ghee already. 

         9. Tap the pan and use your laddle to level it. Rest it for about 3 hours. 

        10. After 3 hours, invert the pan to unmould the mysore pak. Cut it with a knife. Serve the tasty mysore pak. 



Pictorial  : 


            Grease the pan which we are going to pour the mysore pak batter. ( the mysore pak batter must be poured immediately without any delay, that is why we are greasing the pan and keep it ready) . Keep the pan aside


                       Take ghee and oil


             Mix both oil and ghee in a bowl


                  Place it over low flame


              Ghee gets melted. It takes 1 min to melt. Turn off the flame

  
                 Take gram flour in a bowl


       Add half of the melted ghee and oil mixture to gram flour


       Mix well without any lumps. Keep it aside


                      Take sugar in a kadai


                         Add water to it


        Mix well. Place over flame. (Do not place sugar over flame without adding water, it may get caramelized) 


             Cook for 5 mins. Scarp the sides and stir in between


                    Let it gets thickened


         Check the sugar syrup. Cook until you get 1 string consistency. ( 1 string consistency is that, if you take a drop of sugar syrup in between your fingers, hold a sec and open your fingers, you can see a string in between your fingers just as showed in the picture) 


           After getting 1 string consistency, add the gram flour mixture mixed with ghee and oil


     Mix well until it combines with sugar syrup


             Cook for 5 mins. Stir continuously. It becomes forthy


          Add half of the remaining ghee and oil mixture to it


           Mix well until it combines well


           Again add the remaining ghee and oil


           Repeat the process. Stir continuously until it doesn't stick to the kadai 


           It takes 15 - 20 mins to complete the whole process.  Remove from flame


          Pour it immediately without any delay into the pan which we have greased already. 


           Tap the pan and use a laddle to level it


                   Rest it for about 3 hours


         After 3 hours, invert the pan to unmould the mysore pak


           Use a knife to cut into pieces


                 Tasty ghee mysore pak is ready


          You can see the texture. It is very soft and it melts in mouth




                Mysore pak is ready to be served
