carrot chutney recipe with step by step pictures
carrot chutney is a sidedish for south Indian breakfast like idli, dosa or paniyaram. I usually make chutneys like onion chutney, tomato chutney, coconut chutney. But Whenever I get bored to make normal chutneys , or i have some leftover carrots that can be finished soon, then i go for this carrot chutney. It is a chutney that balances both sweet and spicy. Try it in your home.

Ingredients :
. carrots - 2
. onion - 1 big onion(roughly chopped)
. tomato - 1 big sized (roughly chopped)
. garlic pods - 4
. tamarind - 1 pinch
. Cumin seeds - 1 tsp
. Urad dal - 1 tsp
. dry red Chilli - 2
. mustard seeds - 1 tsp
. Oil - 2 tblsp
. Salt to taste
Method :
1. peel the skin of the carrots and chopped into cubes. Heat 1 tblsp of oil in a pan, add chopped carrots, cover and cook for 5 min. Keep it aside.
2. In the same pan, add cumin seeds urad dal and dry red Chilli. Roast until it gets golden brown. Keep it aside.
3. In the same pan, add chopped onion, tomato, garlic and tamarind. Saute until it becomes soft. Let it cool.
4. Transfer all the roasted ingredients into the mixer jar. Add salt and required water and grind to smooth consistency.
5. Temper with mustard seeds. Serve.
