Ridge gourd fry/ peerkangai poriyal

Ridge gourd(Peerkangai) fry recipe with step by step pictures 


               Peerkangai (ridge gourd)  poriyal is an accompainment for vegetarian meal.  I often cook peerkangai in my kootu recipes.  But When I tasted this peerkangai poriyal recipe,  i felt that this tastes even better than kootu.  When i cooked this recipe for the very first time,  i have added water while cooking and my dish just spoiled.  Then my friend gave this recipe that not to add water,  the vegetable itself oozes water. I have tried it and came out soo good.  This recipe turned to one of my day to day recipes.  Hope you like it and try this out.

Ingredients  :

.  Peerkangai (ridge gourd ) - 3
.  onion - 1 big onion (finely chopped )
.  green chillies  - 3 
.  curry leaves  - 1 sprig 
.  Turmeric powder  - 1 tsp 
.  Salt to taste 
.  Oil - 2 tblsp 
.  Mustard seeds  - 1 tsp 
.  Urad dal - 1 tsp 
.  Bengal gram - 1 tsp 
.  Coconut - 1/4 cup grated 

Method  : 

         1.  Peel the skin of the ridge gourd.  (Just peel the sharp edges). chop into small cubes. 
        2.  Heat oil in a kadai.  Add mustard seeds ,urad dal and bengal gram dal.  After it crackle,  add chopped onion,  curry leaves and slited green chillies . Saute until translucent. 
      3.  Add chopped ridge gourd. Saute for a minute.  Add turmeric powder and salt.  Mix well.  Cover and cook in low flame.  The vegetable oozes water.  
      4. Cover and  Cook until water dries.  Stir in between. Add grated coconut. Toss well.  Serve.

           1) Take the ridge gourd. 


           2) Peel the sharp edges. (Do not peel the full skin). 


          3) chop into small cubes.

           11) Cover and cook.  The vegetable itself oozes water.  Cover and cook until water dries. Stir in between. 


             12) Add grated coconut. 


             13) Toss it well.  


              14) Serve.
