Soya chunks (meal maker) butter masala recipe with step by step pictures
Soya chunks butter masala is a north-indian sidedish for indian flat breads like chapathi, naan, roti ,paratha. It is less spicy and rich taste recipe. Soya chunks is a better alternative for non-veg lovers. I like soya chunks that it is easy to cook and tastes yummy. This recipe is inspired from my Aloo gobi masala. I haven't any potatoes at home and thought of making this soya chunks in this recipe. It tastes too good . I served it with Chapathi.

Ingredients :
. soya chunks /meal maker - 1 cup
. Cashew nuts - 8
. onion - 2 medium sized (roughly chopped)
. tomato - 2 medium sized (roughly chopped )
. ginger - 2 inch piece
. Garlic cloves - 8
. turmeric powder - 1/2 tsp
. Kashmiri red Chilli powder - 1 1/2 tsp
. Coriander powder - 2 tsp
. Garam masala - 1 1/2 tsp
. Salt to taste
. Butter - 2 inch cube
. Cumin seeds - 1 tsp
. Fresh cream - 4 tblsp
. Kasuri methi - 1 tsp
. Coriander leaves - to garnish
Method :
1. Soak soya chunks in hot water for about 15 mins. Squeeze the excess water and keep it aside. Soak cashew nuts in hot water for 10 min.
2. Heat oil in a kadai. Add roughly chopped onion, tomato, ginger and garlic. Saute until it becomes mushy. Turn off the stove. Let it cool.
3. Tranfer to mixer jar along with cashew nuts. Grind to smooth paste by adding little water.
4. Heat butter in a kadai. Add cumin seeds. After it crackle, add ground paste. Mix for few secs. Add soya chunks. Mix well.
5. Add water. Add turmeric powder, chilli powder and coriander powder. Mix well and Cook for 5 min.
6. Add garam masala and salt. Mix well and cook for 10 min in medium flame. Add fresh cream. Cook for a min. Add crushed kasuri methi and coriander leaves just before switching off the flame. Serve.

14) Add turmeric powder, chilli powder and coriander powder. Mix well and cook for 5 mins.
15) Add garam masala.
16) Add salt.
17) Cook in medium flame for 10 mins.
18) Add fresh cream. Cook for a min.
19) Add crushed kasuri methi and coriander leaves . Turn off the stove.
20) Serve.
Note :
1. I have used kashmiri red Chilli powder to give nice orange colour. You can use normal chilli powder too.
2. Adding fresh cream gives rich taste.
3. Adding kasuri methi gives nice aroma and taste. It is optional.
