Tomato rice( tomato biriyani) recipe with step by step pictures 


              Tomato rice is a very good lunch box recipe.  I made this in biriyani style. It tastes soo good.  It is a one pot cooking recipe.  It is perfect for busy week days as it takes little time to cook. The flavor of mint enhances the taste,  so do not skip it.  I have added kashmiri chilli powder.  It gives nice colour.  I cooked it with normal rice,  you can use basmathi rice if you wish.  Try it and let me know how it turns out to you.  Hope you like it.

Ingredients  :

.  Rice - 2 cup 
.  Tomatoes  - 3 big sized ( chopped)
.  onion - 1 big sized ( chopped lengthwise )
.  Green chilli  - 3 (slited)
.  ginger garlic paste - 1 tblsp 
.  Mint&coriander leaves - 1 handful 
.  Turmeric powder  - 1/2 tsp 
.  Kashmiri red Chilli powder - 1 tblsp 
.  Garam masala - 1 tblsp 
.  Salt to taste 
.  Oil - 2 tblsp 
.  Cinnamon - 3 
.  cloves - 5 
.  Fennel seeds - 1 tsp

Method : 

           1. soak the rice for 1/2 an hour.  Strain it and keep it aside.  
           2.  Heat oil in the pressure cooker.  Add cinnamon, cloves and fennel seeds. 
          3.  After it crackle,  add onion,  green chillies.  Saute until golden brown. 
          4.  Add ginger garlic paste.  Saute until raw smell goes out. Add chopped tomatoes.  Saute for 2 min.  
          5.  Add turmeric powder, chilli powder, garam masala and salt. Mix it.  Cook until oil separates. 
         6.  Add mint and coriander leaves.  Mix well.  Add 4 cups of water.  Check for salt. 
         7.  After it gets roll boil,  add soaked rice. Cover with lid.  Pressure cook for 2 whistles in medium flame. 
         8.  After pressure releases,  fluff the rice.  Serve. 


Pictorial  :

           4) After it splutters,  add chopped onion and slited green chillies. 



           5) Saute until golden brown.  Add ginger garlic paste. 


           6) Saute until raw smell goes out.  Add chopped tomatoes. 


           7) Saute for 2 min.  Add turmeric powder, chilli powder,  garam masala and salt. 



            8) Mixvwell and cook until mushy and oil separates. 


            9) Add mint and coriander leaves. 



           10) Give it a mix. 



           11) Add 4 cups of water. check for salt. 



          12) After it gets roll boil,  add soaked rice. 


          13) cover with lid.  Pressure cook for 2 whistles in medium flame. 



            14) Fluff the rice.  Serve. 



Note : 

          1.  I used normal rice.  For 2 cups of rice,  i added 4 cups of water. If you are using basmati rice,  add 2 cups of water for 2 cups of rice.
