Vegetable brinji rice recipe with step by step pictures 


            Vegetable brinji rice is my all time favorite recipe among all other rice recipes.  I often make it for my daughter's lunch box.  It is very easy and simple to cook recipe.  This recipe is ideal for kids lunch box as it is less spicy but very tasty and healthy as it contains many vegetables.  

           I personally like the colour of this recipes that it has different coloured vegetables.  In my childhood days,  my mom used to cook this recipe for my lunch box.  I liked this vegetable brinji rice very much till now.  It is perfect for busy morning and you want to cook lunch soon.  You can also cut the vegetables before the day and keep it in refrigerator.  But i chopped the veggies before going to cook.

Ingredients  :

.  Vegetables (carrot,  potato,  peas,  soya chunks)  -  1 1/2 cup 
.  Rice -  2 cup 
.  Onion -  1 big onion (chopped lengthwise) 
.  Tomato -  1 medium sized( chopped lengthwise)  
.  Green chilli -  3 (slited)
.  Ginger garlic paste -  1 tblsp 
.  Turmeric powder -  2 tsp 
.  Mint leaves  -  1 handful (loosely packed)  
.  Oil -  1 /2 tblsp 
.  Ghee -  1/2 tblsp 
.  Cinnamon -  3 (broken)  
.  Cloves -  4 
.  Bay leaf -  2 
.  Salt to taste 

Method : 

          1. Soak rice for half an hour.  Soak soya chunks in hot water.  Chop veggies.  

          2. Heat oil and ghee in pressure cooker.  Add whole spices.  Add onion,  green chillies.  Saute until golden brown.  

         3. Add ginger garlic paste.  Saute.  Add tomato followed by salt and turmeric powder.  Saute until mushy.  

         4. Add veggies and soya chunks.  Saute for a min.  Add mint leaves.  Mix well. 

        5. Add water.  After roll boil,  add soaked rice.  Mix well.  After gets to boil,  cover with lid. 

       6. Pressure cook for 2 whistles.  After pressure releases,  fluff the brinji.  Serve with raita. 

Pictorial  : 

          1) Wash and soak rice for half an hour. 


          2) Soak soya chunks in hot water for 10 min.  


          3) Chop carrot and potatoes into cubes. 


          4) Heat oil and ghee in pressure cooker. 


         5) Add cinnamon,  cloves and bay leaf. 


         6) After it splutters,  add chopped onion and slited green chillies. 


         7) Saute until golden brown. 


         8) Add ginger garlic paste. 


         9) Saute until raw smell goes out. 


        10) Add chopped tomato. Mix well. 


        11) Add turmeric powder and salt. 


         12) Cook for a min. 


         13) Add chopped veggies ( carrot,  potato and fresh peas). 


          14)  sqeeze the excess water from soya chunks and add it. 


          15) Mix well and cook for a min. 


         16) Add mint leaves. 


         17) Mix well. 


         18) Add 4 cups of water.  ( for 2 cups of rice). 


         19) Let it come to roll boil. 


         20) Add soaked and drained rice. 


        21) mix well and check for salt.  ( If required add salt)  


       22) Close with lid and pressure cook for 2 whistles. ( sorry for the bad lighting in the kitchen) 


       23) Fluff the brinji. 


       24) Serve with raita. 


Note : 

        1. Adding 2 tsp of turmeric powder gives you nice colour and flavor.  

        2. Adding soya chunks is optional.  You can add your favorite vegetables like french beans,  cauliflower. 

        3. I usually pressure cook in high flame for the first whistle and cook in low flame for the second whistle to get perfectly cooked brinji rice.
