Vengaya sambar recipe with step by step pictures
Vengaya sambar is a famous south-indian sambar recipe. It is an accompaniment for rice as well as for idli, dosas. This sambar is made using small onions (shallots) . In tamilnadu, this small onion is called sambar onion. My mom often make sambar using small onions. She says that the small onions are more healthier and tastier when compared to big onions. But i hate onions at my school days.
When i started cooking, I was very lazy to peel the skins of small onions and i used big onions for my sambar recipes. But, when i tasted vengaya sambar, i became the fan of it. And i say, '' mom, you are the king of making sambar". And she says that, small onions are the secret ingredient. Then i started cooking sambar with small onions. Give a try to this recipe, it never fails and sure you love it.

Ingredients :
. Chinna vengayam / small onion - 1 cup (peeled)
. Tomato - 1 small sized ( chopped lengthwise)
. Toor dal - 1 cup
. Sambar powder - 1 1/2 tblsp
. Turmeric powder - 1 tsp
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Hing / asafoetida - 1/2 tsp
. Curry leaves - 1 sprig
. Salt to taste
. Tamarind water - 2 tblsp
Method :
1. Pressure cook toor dal along with turmeric powder. Mash well. Keep it aside.
2. Heat oil in a kadai. Add mustard seeds, urad dal. After it sizzle, add hing and curry leaves.
3. Add small onions. Saute until it becomes translucent. Add tomato. Saute for a min.
4. Add sambar powder and salt. Saute for few secs. Add 2 cup of water. Cook for 5 min. Add Tamarind water followed by dal.
5. Cook for 10 mins in medium flame. Vengaya sambar is ready.
Pictorial :
1) pressure cook toor dal with turmeric powder for 3 whistles. Mash well. Keep it aside.
2) Heat oil in a kadai.
3) Add mustard seeds, urad dal. Let it splutter and turns to golden brown.
4) Add hing and curry leaves. Let it sizzle.
5) Add small onions.
6) Saute until it becomes translucent.
7) Add tomato. Saute for a min.
8) Add sambar powder and salt.
9) Saute for few secs. (do not burn the spices powder)
10) Add 2 cups of water. Cook for 5 mins.
11) Add tamarind water.
12) Add mashed dal. Adjust the consistency by adding water.
13) Cook for 10-15 mins.
14) Vangaya sambar is ready.
Serve it with cooked rice.
