Potato egg kurma recipe with step by step pictures 


              Potato egg kurma is a sidedish recipe for Indian flat breads like Chapathi, paratha, and also for idli dosas.  It is a easy and quick recipe that you can make it within 15 mins if you have already boiled the eggs and Potatoes.  Egg and Potatoes goes well and today i made this kurma for dinner.  It came out too good.

Ingredients   : 


.   Potato   -  3 (boiled) 
.   Egg  -   3  (boiled) 
.   Onion  -  1 medium sized  (finely chopped) 
.   Tomato  -  1 medium sized  (finely chopped) 
.   Ginger garlic paste   -  1 tblsp
.   Oil  -  1 tblsp
.   Cinnamon   -  2
.   Cloves  -  4
.   Cardamom  -  2 
.   Fennel seeds  -  1 tsp
.   Curry leaves   -  1 sprig
.   Turmeric powder   -  1/2 tsp
.   Kulambu powder   -  1 tblsp
.   Salt to taste 
.   Coconut  -  3 tblsp (grated) 
.   Cashews or fried gram  -  1 tblsp
.   Coriander leaves to garnish


Method  : 


             1.  Boil the Potatoes  for 3 whistles.  Peel the skin.  Roughly mash it.  Keep it aside.  Boil the eggs and peel the skin.  Make slits around it.  Keep it aside. 

            2. Heat oil in a kadai.  Add whole spices.  After it sizzle,  add onion and curry leaves.  Saute until onion becomes translucent.  

            3. Add ginger garlic paste.  Saute until raw smell goes out.  Add tomato.  Saute until mushy.  

            4. Add turmeric powder, Kulambu powder and salt.  Saute until oil separates.  Add eggs and Potatoes.  Mix well for few secs.  

            5. Add water.  Cook for 2 mins.  Grind Coconut and fried gram in mixer jar.  Add the paste to kurma.  Cook for 5 mins.  

            6. Add coriander leaves.  Switch off the flame.  Potato egg kurma is ready.

Heat oil in a kadai


Add cinnamon, cloves, Cardamom and Fennel seeds


After it splutters,  add finely chopped onion and curry leaves.  Saute until onion becomes translucent 


Add ginger garlic paste.  Saute until raw smell goes out


Add tomato.  Saute until mushy


Add turmeric powder, Kulambu powder and salt  ( you can replace kulambu powder with any of your curry powder or simply with chilli powder + coriander powder+ cumin powder) 


Saute until oil separates


Add eggs and roughly mashed Potatoes 


Mix well for few secs


Add water.  Mix well.  Cook for 2 mins


Add Coconut paste  ( grind grated coconut and fried gram in a mixer jar by adding little water to smooth paste)  


Mix well


Cook for 5 mins


Add coriander leaves.  Switch off the flame


Tasty Potato egg kurma is ready to be served
