Besan flour (kadalai maavu) murukku is a traditional south-indian savouries which is made in most of the homes for diwali festival. Murukku is one of the easiest snack yet very tasty that you can make it within 20 - 30 mins. The murukku dough is made within 2 -3 mins but it takes time to cook the murukku perfectly. It needs little patience to fry the murukku. It must be cooked in low flame otherwise we don't get the perfectly crunchy murukku. Hope you like the recipe. Give it a try.

Ingredients :
. Besan flour - 1/2 cup
. Rice flour - 1/2 cup
. Butter - 3/4 tblsp (soft at room temperature)
. Hot oil - 1 tsp
. Sesame seeds - 1 tsp
. Salt - 3/4 tsp
. Water to knead - approximately less than 1/2 cup
. Oil for frying
Method :
1. Take besan flour and rice flour in a bowl. Add butter, sesame seeds, hot oil and salt. Mix well with a spoon.
2. Crumble the flour until butter mixes well with flour.
3. Add water little by little. Knead well to make a soft dough.
4. Heat oil in kadai for frying. Keep the flame to low.
5. Grease the murukku mould with oil. Fill it with prepared dough. Start pressing it in a laddle.
6. Drop it gently into oil. Do it one by one. Do not over crowd.
7. Cook in low flame. Do not disturb the murukku for 2 mins. Flip it gently with paniyaram needle.
8. Cook until both sides becomes golden brown. Strain the murukku. Remove to plate. Let it cool. Serve.

Take besan flour in a bowl
Add rice flour

Crumble it well until butter mixes well with flour
Add water little by little and knead the flour to make a soft dough ( it needs less than 1/2 cup of water)
Heat oil in kadai for frying murukku. Keep the flame to low
Take the murukku mould. Grease it with oil
Fill the prepared dough into mould
Start pressing the dough into round shape over the laddle
Gently drop it into oil
Similarly drop one by one. Do not over crowd. (Do not disturb the murukku for atleast 2 mins, otherwise it will break. Gently flip it to other side to get evenly cooked)
Fry in low flame until both the sides becomes golden brown. Strain the murukku.
Let it cool. Serve
Store it in air-tight container and it will be good for atleast 1week
