Vegetable channa salad is a healthy salad recipe and it is a go to snack during diet. It gives filling feel as it has channa and refreshing as it has cucumber. It is very tasty and can be made within few mins.

Ingredients :
For 2 servings :
. Black channa - 1/2 cup (100gms approx)
. Peanuts - 1/4 cup ( 50gms approx)
. Carrot - 1 medium sized ( chopped into small cubes)
. Cucumber - 1 medium sized ( chopped into small cubes )
. Coriander leaves - 1 tblsp ( finely chopped)
. Red chilli powder - 1/2 tsp
. Salt to taste
. Lemon juice - 1 tblsp
Method :
1. Soak channa overnight . Cook the channa and peanuts with little salt in pressure cooker.
2. Take cooked channa and peanuts in a mixing bowl. Let it cool.
3. Add chopped carrots, cucumber and coriander leaves.
4. Add chilli powder, salt and lemon juice. Mix everything well. Salad is ready to serve.
Pictorial :
Take cooked channa in a mixing bowl ( soak channa overnight and then cook in pressure cooker)
Add cooked peanuts. Let it cool ( I have added little salt while cooking channa and peanuts)
Add chopped cucumber and carrots
Add chilli powder, coriander leaves and salt ( you can replace chilli powder with chat masala)
Add lemon juice
Mix everything well
Vegetable channa salad is ready to serve
