Tricolor poriyal recipe with step by step pictures
Tricolour poriyal is a simple poriyal recipe and the name itself describes that it has three different coloured vegetables. Carrot, beans and Potatoes makes ultimate combination whatever the recipe it is, if it is a biriyani, pulao, kurma, gravy, stew, or a filling, these three goes well. Today i made poriyal with these vegetables. You can make variations with other vegetables like cauliflower, green peas, beetroot, cabbage.

Ingredients :
. Carrot, beans and Potatoes - 2 cup ( chopped into small cubes)
. Onion - 1 bigonion ( finely chopped)
. Turmeric powder - 1 tsp
. Kulambu powder - 2 tsp
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Chana dal - 1 tsp
. Grated coconut - 2 tblsp
. Salt to taste
Method :
1. Chop the vegetables. Heat oil. Add mustard seeds and chana dal. After it crackle, add onion. Saute until translucent.
2. Add chopped vegetables. Saute for 2 min. Add turmeric powder, kulambu powder and salt. Saute for a min.
3. Add required water. Cover and cook until it becomes soft and water dries off. Add grated coconut. Mix well and cook for a min. Tricolour poriyal is ready.

1) Chop the vegetables.

4) After it splutters, add chana dal. Let it become golden brown.
5) Add chopped onion.
6) Saute until it becomes translucent.
7) Add chopped vegetables.
8) Saute for 2 min. Add turmeric powder, kulambu powder and salt.
9) saute for a min.
10) Add 1 cup of water.
12) Cover and cook in medium flame until it becomes soft and water dries off.
13) Add grated coconut.
14) Mix well and cook for a min.
15) Tricolour poriyal is ready.
Note :
You can add your favorite vegetables.
You can replace kulambu powder with chilli and coriander powder.
