Kathirikai kara kulambu recipe with step by step pictures 


                Kathirikai kara kulambu is a traditional tamilnadu recipe which is very flavourful and finger licking recipe.  This kulambu is my daughter's favorite.  She likes the mild sweetness of this recipe.  I used the new tamarind.  If you use old one,  then you get the dark colour.  Adding jaggery balances the spice and sour taste of this recipe.  You can skip that too.

Ingredients   :

.  Kathirikai /brinjal  -  10 nos.
.  Onion  -  1 big sized (finely chopped)
.  Tomato  -  1 big sized ( finely chopped)
.  Garlic cloves  -  8 nos.
.  Curry leaves  -  1 sprig
.  Turmeric powder  -  1 pinch
.  Chilli powder  -  1 tblsp
.  Coriander powder  -  3 tblsp
.  Sesame oil  -  2 tblsp
.  Mustard seeds  -  1 tsp
.  Urad dal  -  1 tsp
.  Fenugreek seeds  -  1 tsp
.  Cumin seeds  -  1 tsp
.  Tamarind water  -  3 tblsp
.  Coconut milk  -  1/2 cup
.  Jaggery  -  1 tblsp
.  Salt to taste

Method  :

         1. Heat oil in a kadai.  Add mustard seeds,  cumin seeds,  urad dal and fenugreek seeds.  After it sizzle,  add onion,  curry leaves and garlic cloves. 

        2. Saute until it becomes soft.  Add tomato.  Saute until mushy.  Add brinjal.  Saute for a min. 

        3. Add spice powders and salt.  Mix well.  Add tamarind water.  Adjust the consistency by adding 1 cup of water.  

         4. Cook for 10 mins.  Add Coconut milk.  Cook for 5 mins.  Finally add jaggery.  Cook for a min.  Switch off the flame.  Kathirikai kara kulambu is ready. 


Pictorial   :

           1) Wash and Make slits in the brinjal. 


           2) Immerse the brinjal in water to provide discoloration. 


           3) Heat sesame oil in a kadai. 


           4) Add mustard seeds, urad dal, cumin seeds and fenugreek seeds. 


           5) After it sizzle, add onion, garlic and curry leaves. 


           6) Saute until it becomes soft. 


           7) Add tomato. Saute until mushy. 


           8) Add brinjal.  


           9) Saute for a min. 


         10) Add chilli powder, turmeric powder,  coriander powder and salt. 


         11) Mix well. 


          12) Add tamarind water. 


          13) Add 1 cup of water. 


          14) Cook for 10 mins. 


          15) Add Coconut milk. 


           16) Cook for 5 mins. 


          17) Add jaggery. Cook for a min.  


         18) Switch off the flame.



          19) Kathirikai kara kulambu is ready.
