How to make idli dosa batter with step by step pictures
South-india's most common breakfast is idli or dosa. It is a very easy and quick breakfast recipe. To make idli and dosa, we need instant idli dosa batter. We can make the batter and keep it in the refrigerator for about a week. I usually make this on weekend and keep it for that whole week. Idli dosa batter can be grind in mixer jar but for more quantity and to get more softer idlis, we must grind it in wet grinders.
In tamil, there is a famous kids rhymes which is " Dosai amma dosai, amma sutta dosai, Arusi maavum ulundu maavum kalanthu sutta dosai". Like that, to make idli dosa batter, we need freshly ground arusi maavu(rice flour batter) and ulundu maavu (urad dal batter). Most of the people grind both rice and urad dal at the same time. But to get soft idlis, we have to make fluffy urad dal batter. And so i grind it separately and mix the batters.
To make urad dal batter fluffy, grind it in wet grinder by adding water little by little till it becomes fully ground and fluffy. ( do not add more water) . Take out the urad dal batter and grind rice flour by adding enough water. The batter should neither thick nor thin. Mix both rice flour batter and urad dal batter well with little salt. Leave it for 8 hours. The batter gets fermented. It rised to 1 inch and your idli dosa batter is ready. You can store it in refrigerator for a week.
Adding a tblsp of fenugreek seeds while grinding will gives nice golden brown colour while making dosas.

Gram flour sambar

2. Grind rice in wet grinder till smooth. Grind urad dal and fenugreek seeds by adding little water till fluffy.
3. Mix both batter with 2 tblsps of salt. Leave it for 8 hours to ferment. Mix well and make dosas.

. Idli rice / parboiled rice - 1 kg (5 cups or glass approximately)
. Urad dal - 200gms ( 1 cup approximately)
. Fenugreek seeds - 1 tblsp
. Salt to mix with batter
Method :
1. Soak rice for 3 hours. Soak both urad dal and fenugreek seeds for 2 hours.
2. Grind rice in wet grinder till smooth. Grind urad dal and fenugreek seeds by adding little water till fluffy.
3. Mix both batter with 2 tblsps of salt. Leave it for 8 hours to ferment. Mix well and make dosas.

Take 5 cups of idli rice in a big bowl
Soak in water for about 3 hours
Take 1 cup of urad dal and 1 tblsp of fenugreek seeds in a bowl
Soak in water for 2 hours
Wash the rice and drain the water
Grind it in a wet grinder to smooth consistency by adding 3 - 4 cups of water approximately
Wash urad dal and fenugreek seeds and drain the water
Grind it in a wet grinder by adding 1 cup of water at some intervals till the batter becomes fluffy (do not add more water otherwise the batter wont get fluffy)
Take both rice flour batter and urad dal batter
Mix both batter well by adding 2-3 tblsps of salt. Leave it for 8 hours to ferment
After 8 hours, the batter gets fermented. It rised to 1 inch. Thus dosa batter is ready. You can store it for a week in refrigerator.
You can see the batter has some small bubbles as it is fermented. It is perfect to make idli dosas.
Mix it once
Heat dosa tawa. Pour a laddle of batter
Flatten it to round shape
Drizzle a tsp of oil over it. Cook for 30 secs
Flip it and cook for another 30 secs.
Dosa is ready in minutes using instant dosa batter.
