Tiffen sambar/ idli sambar/ sidedish for idli dosas

Tiffen sambar recipe with step by step pictures 


                Sambar is the main sidedish for idli dosas in most of the restaurants and also in south-indian homes.  I usually make sambar for rice and serve it as a sidedish for idli in morning.  But when i tried sambar from small hotels,  it tastes so good and varies from the usual sambar.  Then i searched for the recipe and i got it.  I made this sambar without vegetables.  If you want you can add carrot,  beans,  drumstick for this sambar.

Ingredients   :


.  Toor dal  -  1/2 cup
.  Onion  -  1 medium sized (finely chopped) 
.  Tomato   -  1 medium sized (roughly chopped) 
.  Garlic cloves  -  4 nos. 
.  Cumin seeds  -  1 tsp
.  Curry leaves   -  1 sprig
.  Oil  -  1 tblsp
.  Mustard seeds  -  1 tsp
.  Urad dal  -  1 tsp
.  Asafoetida/hing  -  1 pinch
.  Turmeric powder  -  1 tsp
.  Sambar powder  -  1 tblsp
.  Gram flour  -  1 tblsp
.  Salt to taste  
.  Coriander leaves to garnish

Method  :


            1. Wash toor dal.  Take toor dal,  tomato,  garlic cloves,  Cumin seeds,  turmeric powder in a pressure cooker. 

           2. Pressure cook it for 3 - 4 whistles.  After pressure releases,  mash dal with a laddle (matthu).  Keep it aside. 

          3. Heat oil in a kadai.  Add mustard seeds and urad dal.  After it crackle and turns to golden brown,  add onion, curry leaves and hing.   Saute until translucent. 

         4. Add mashed dal.  Mix well.  Add enough water.  Add sambar powder and salt.  Cook for 5 mins.  

         5. Take gram flour.  Add water.  Make a slurry without lumps.  Add this mixture to dal.  Cook for 5 mins.  

         6. Switch off the flame.  Garnish with coriander leaves.  


Pictorial   :

        1) Wash toor dal.  Take it in a pressure cooker.

       3) Add  2 cup of water. 


       4) Pressure cook for about 3- 4 whistles. 


        5) After pressure releases,  mash dal with a laddle(matthu). Keep it aside. 


         6) Heat oil in a kadai. 


          7) Add mustard seeds and urad dal. 


          8) After it crackle and turned to golden brown,  add chopped onion and curry leaves. 

9) Add asafoetida(hing).                   


          10) Saute until onion becomes translucent. 


          11) Add mashed dal to it. 


          12) Add 1 cup of water to it. 


          13) Add sambar powder and salt. Mix well. 


          14)  Cook for 5 mins. 


          15)  Take gram flour in a bowl. 


          16) Add water to it. 


          17)  Make a slurry without any lumps. 


          18) Add this mixture to the dal. 


          19) Cook for 5 mins. 


          20) Switch off the flame.  Garnish with coriander leaves. 


          21) Tiffen sambar is ready to be served.
