Karunai kizhangu varuval / elephant yam tawa fry

Karunai kizhangu varuval recipe with step by step pictures 


               Karunai kizhangu varuval is a sidedish recipe for rice in south-indian meal.  karunai kizhangu can be made as a poriyal(stir fry),  kara kulambu,  and so many.  But this karunai kizhangu tawa fry is my husband's favourite.  He likes it so much and whenever he shops veggies,  karunai kizhangu is a must vegetable in his basket.  Personally i dont like it much as i experienced itchiness while eating it in my childhood.  

             I usually marinate the sliced karunai kizhangu with spice powders and then fried in tawa.    This recipe was got from some other blog and tamarind was used in this recipe.  I think it reduces the itchy feel while eating it and so wanted to try it.  And yes it does.  I liked it now.  Try this recipe and you do like it.

Ingredients   : 


.   Karunai kizhangu   -  1/4 of medium sized karunai kizhangu 
.   Tamarind puree  -  1 tblsp
.   Turmeric powder  -  1 tsp
.   Chilli powder  -  2 tsp ( as per you taste) 
.   Coriander powder  - 2 tsp
.   Salt to taste 
.   Hing -  1/4 tsp
.   Gram flour  -  1 1/2 tblsp
.   Oil for tawa frying 


Method  : 


             1. Remove the skin of karunai kizhangu.  Slice it.  Take water and add tamarind puree,  turmeric powder.  

            2. Add karunai kizhangu slices.  Boil for 5 mins until half cooked.  Strain the slices.  

           3. Add other ingredients  and marinate it for 1/2 an hour.  

            4. Heat oil in tawa.  Add karunai kizhangu slices.  Cook in low flame for 2 mins.  Flip it using spoons.  Cook for another 2 mins.  

           5. Cook both the sides until golden brown.  Cook in batches.  Transfer to plate.  Karunai kizhangu tawa fry is ready.  Serve.

            Take 1/4 of medium sized karunai kizhangu 

              

Remove the skin


Make it as slices


Take water and add tamarind puree,  turmeric powder


Add karunai kizhangu slices


Parboil (half cook)  the karunai kizhangu slices 


Strain it.  Let it cool 


Add chilli powder,  coriander powder,  salt,  hing and gram flour


Mix well and marinate it for 1/2 an hour


Heat oil in a pan or tawa


Add marinated karunai kizhangu slices.  Cook for 2 mins in low flame


Flip it using spoons.   Cook for another 2 mins.  Cook both the sides until golden brown.  I cooked in batches


Transfer to plate. Karunai kizhangu tawa fry is ready too be served.
