Vegetable pulao recipe with step by step pictures
Vegetable pulao is a North-indian lunch which is served with any spicy gravies or curries. It is ideal for lunch box recipes. Kids love it as it is less spicy yet very tasty recipe. It is healthy too as it contains more vegetables. I have added Coconut milk to it which enhances the taste of the pulao. You can skip that if you dont like Coconut taste.
This vegetable pulao is my daughter's favorite. I often cook this for her lunch box. I used basmathi rice for this recipe. I have already posted Vegetable pulao with normal rice. Check that too. This vegetable pulao can be served with any spicy sidedish. Today i served it with Spicy Potato podimas which is my husband's favorite.

Ingredients :
. Basmati rice - 1 cup
. Mixed vegetables - 1 cup ( carrot, peas, potato, soya chunks)
. Ghee - 1 tblsp
. Oil - 1 tblsp
. Cinnamon - 2
. Cloves - 4
. Cardomom - 2
. Bay leaf - 2
. Onion - 1 big sized ( chopped lengthwise)
. Green chillies - 4
. Ginger garlic paste - 1 tblsp
. Salt to taste
. Mint & coriander leaves - 1 handful (loosey packed)
. Coconut milk - 1/2 cup
Method :
1. Soak Basmati rice for about 1/2 an hour. Soak soya chunks in hot water for 5 mins. Strain and squeeze the soya chunks. Keep it aside.
2. Heat ghee and oil in a pressure cooker. Add whole spices. After it crackle, add onion and green chillies.
3. Saute until onion becomes golden brown. Add ginger garlic paste. Saute until raw smell goes out.
4. Add vegetables and soya chunks along with some salt. Saute for 3 mins. Strain the rice. Add the rice in.
5. Mix well for a min. Add coconut milk and water. Check for salt. Pressure cook for 1 whistle in medium flame.
6. After pressure releases, fluff the rice gently. Tasty vegetable pulao is ready.

Wash and soak Basmati rice in water for about 1/2 an hour
Soak soya chunks in hot water for 5 mins
Strain and squeeze the soya chunks. Keep it aside
Heat ghee in a pressure cooker
Add oil
Add cinnamon, cardamom, cloves and bay leaf
After it sizzle, add sliced onion and green chillies
Saute until onion becomes little golden brown
Add ginger garlic paste
Saute until raw smell goes out( it sticks to the bottom, add salt and it can be easily scarped with laddle)
Add chopped carrots, potato, frozen peas and soya chunks
Add salt. Saute for 2-3 mins
Add mint and coriander leaves. Mix well
In the meantime, strain the basmati rice
Add rice to veggies
Mix well for a min
Add coconut milk
Add water ( for 1 cup of basmati rice, add 2 cups of water, 1/2 cup Coconut milk+ 1 1/2 cup water) . Check for salt.
Cover with lid. Pressure cook for 1 whistle in medium flame. After pressure releases, fluff the rice gently
Serve with your choice of sidedish
