Kathirikai urulaikilangu chutney recipe with step by step pictures
Kathirikai urulaikilangu chutney is a sidedish recipe for Indian flat breads like Chapathi, or dosas. It is a very simple recipe yet very tasty. It is perfect for kids who doesnt eat brinjal. Ingredients :
. Kathirikai / brinjal - 1 cup ( cubed)
. Potato - 1 cup ( peeled, cubed)
. Onion - 1 big sized ( finely chopped)
. Tomato - 2 medium sized
. Garlic cloves - 6 nos.
. Green chilli - 1 ( as per your taste, add more if you want more spicy)
. Turmeric powder - 1/2 tsp
. Cumin powder - 1 tsp
. Sambar powder - 1 tsp (optional)
. Sambar powder - 1 tsp (optional)
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1/2 tsp
. Curry leaves - 1 sprig
. Dry red chillies - 2
. Salt to taste
Method :
1. Take Potato, brinjal, tomato, garlic cloves, green chilli, turmeric powder and cumin powder in a pressure cooker. Pressure cook for 2 whistles.
2. Try to remove the skin of tomato. Mash it well.
3. Heat oil. Add mustard seeds and urad dal. After it crackle, add onion, curry leaves and dry red chillies. Saute until onion becomes translucent.
4. Add mashed Potato brinjal. Adjust the consistency by adding 1/2 cup of water. Add salt. Cook for 5- 10 mins. Kathirikai urulaikilangu chutney is ready.

Take cubed Potato, brinjal and tomatoes in a pressure cooker
Add garlic cloves and green chilli
Add turmeric powder and cumin powder
Add water and pressure cook for 2- 3 whistles
Try to remove the skin of tomatoes using spoon.
Mash it well with laddle or traditional matthu
Heat oil in a kadai
Add mustard seeds and urad dal
After it cracle and turns to golden brown, add finely chopped onion, curry leaves and dry red chillies
Saute until onion becomes translucent
Add mashed Potato brinjal
Add salt, 1 tsp sambar powder and adjust the consistency by adding 1/2 cup of water ( chutney must be little thick)
Cover and cook for 5 - 10 mins. Switch off the flame
Kathirikai urulaikilangu chutney is ready to be served
