Cauliflower gravy recipe with step by step pictures 

                 Cauliflower gravy is a sidedish recipe for Indian flat breads like Chapathi, phulka,  naan,  roti,  paratha and dosas.  This cauliflower green gravy is very easy to cook and tastes too good.  It has the strong flavour of fresh coriander leaves.  My daughter liked this gravy very much and so whenever i get the fresh coriander leaves,  sure i make this gravy.  I have already done this gravy with green peas and also with potatoes with some variations.  

            I have added butter in this recipe.  You can replace it with cooking oil.  To get rich and creamy taste,  you can add some soaked cashews while grinding the veggies in this recipe and you can add fresh cream instead of Coconut milk.  Give it a try and sure you like it.

Ingredients   :

.   Cauliflower   -   1 cup (florets) 
.   Fresh coriander leaves   -  1 handful
.   Onion   -   1 big sized  (roughly chopped) 
.   Tomato   -   1 big sized  (roughly chopped) 
.   Garlic cloves  -  6 nos.
.   Ginger   -  2 inch pieces
.   Green chilli  -  2 (as per your taste) 
.   Butter / oil  -  1 tblsp
.   Cumin seeds / jeera   -  1 tsp
.   Turmeric powder   -  1/2 tsp
.   Garam masala  -  1 tsp
.   Salt to taste
.   Coconut milk  -  1/4 cup
.   Kasuri methi   -  1 tsp (optional) 


Method  : 

              1.  Chop the cauliflower into florets.  Soak it in hot water for 2 - 3 mins.  Drain the water.  Keep it aside. 

             2. Heat oil in a kadai.  Add roughly chopped onion, tomato, garlic, ginger and green chillies.  Saute until it gets cooked.  Add coriander leaves.  Saute until it shrinks.  Turn off the flame. 

            3. Let the veggies gets cooled.  Transfer to mixer jar.  Grind it to smooth paste by adding little water.  

           4. Heat oil or butter in a kadai.  Add cumin seeds.  After it sizzle,  add cauliflower.  Saute for a min. Add ground paste.  Mix well. 

           5. Add  1 cup of water.  Mix well.  Add turmeric powder, garam masala and salt.  Mix well.  Cook for 5  - 7 mins until cauliflower gets cooked.  

           6. Add coconut milk.  Cook for 2 - 3 mins until oil separates.  Add crushed kasuri methi.  Turn off the flame.  Tasty cauliflower green gravy is ready.

               Chop the cauliflower into florets

Let it cool.  Transfer it to the mixer jar


Grind it to smooth paste by adding little water


Heat butter or oil in a kadai


Add cumin seeds


After it sizzle,  add cauliflower florets


Saute for a min


Add ground paste.  Mix well


Add 1 cup of water.  Add turmeric powder, garam masala and salt.  Mix well.  Cook for  5  - 8 mins until cauliflower gets cooked


Add Coconut milk.  Cook for 2 - 3 mins


Add kasuri methi.  Cook until oil separates.  Turn off the flame


Yummy and tasty cauliflower green gravy is ready to be served
