Perandai thuvaiyal recipe with step by step pictures
Perandai is one of the healthiest veggies that has enormous health benefits. Including perandai in our meal atleast once in a week helps to cure all digestive problems. Today I am going to share a very simple thuvaiyal (or chutney) recipe which goes well with idli, dosas Or steamed rice. This is the basic way of making chutney. Ingredients :
. Perandai - 2 tblsp ( or few pieces)
. Oil - 1 tblsp
. Cumin seeds - 1 tsp
. Urad dal - 1 tsp
. Black pepper - 1/2 tsp
. Dry red chillies - 2
. Onion - 1 big sized ( roughly chopped)
. Tomato - 1 medium sized ( roughly chopped)
. Garlic cloves - 5 no
. Tamarind - 1 pinch
. Grated coconut - 2 tblsp
. Salt to taste
To temper :
. Gingelly oil - 1 tblsp
. Mustard seeds - 1 tsp
. Curry leaves - 1 sprig
. Dry red chilli - 2
Method :
1. Clean the perandai and get the young tender part alone. If you put the thick part, then the thuvaiyal is not good to taste as it leaves thread like texture.
2. Dry roast cumin seeds, urad dal, red chillies, black pepper. Keep it aside.
3. Heat a tsp of oil and roast the perandai for 2 min in low flame until it changes its color.
4. Saute roughly chopped onions, tomato, garlic and tamarind. Then add grated coconut. Saute for a min.
5. Turn off the flame. Let all the ingredients gets cooled. Transfer to mixer jar. Add salt and Grind it to smooth paste by adding little water.
6. Temper with mustard seeds, curry leaves and red chillies. Serve with steamed rice.

Clean the perandai
Get the young tender part alone
Add cumin seeds, black pepper, urad dal and red chillies in a kadai
Dry roast the ingredients until golden brown. Keep it aside
Heat a tsp of oil in the kadai
Add perandai
Saute fir 2 mins in low flame until it changes the colour
Remove to plate after it changes to yellow colour
Add roughly chopped onions, tomato, garlic and tamarind to the kadai.
Saute until veggies turns mushy
Add grated coconut
Saute for a min. Turn off the flame
Let all the roasted ingredients gets cooled. Transfer to the mixer jar
Add salt to it
Grind it to smooth paste by adding little water. ( Do not add more water. The consistency of the thuvaiyal must be little thick)
Transfer it to a bowl
Temper with mustard seeds, curry leaves and dry red chillies
Tasty and healthy perandai thuvaiyal is ready to be served.
