Coconut rice recipe with step by step pictures
Coconut rice is one of the popular variety rices of south india. It is less spicy yet very tasty recipe. It is ideal for lunch box. It doesn't need any accompaniment but can be served with any dry curries or simple poriyal or with papads. I like to have this coconut rice with my favorite Potato fry My mom often pack this for my lunch in my college days. My friends too liked it very much.
It is a quick recipe. If you have cooked rice and grated coconut, you can make it within 5-10 mins.

Ingredients :
. Coconut - 1 cup (grated)
. Cooked rice - 2 cup
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Bengal gram dal - 1 tsp
. Curry leaves - 2 sprig
. Dry red chillies - 4
. Cashew nuts - 6 (optional)
. Ginger - 1 inch piece (crushed)
. Salt to taste
Method :
1. Cook the rice and let it cool. Grate the coconut.
2. Heat oil. Add mustard seeds, urad dal and bengal gram. After it crackle and turns to golden brown, add curry leaves and cashews. Then add dry red chillies and ginger.
3. Saute for few secs. Add grated Coconut. Saute for a min. Add salt. Saute for 1 more min.
4. Add cooked and cooled rice. Mix well until the Coconut mixed evenly. Turn off the stove. Serve with your favorite poriyal.

1) Heat oil in a kadai. Add mustard seeds.
2) After it splutters, add urad dal and bengal gram dal.
3) Let it turn to golden brown, add curry leaves and cashews.
4) Then add dry red chillies and crushed ginger.
5) Saute for few secs.
6) Add grated coconut.
7) Saute for a min.
8) Add salt.
9) Saute for 1 more min. Add cooked rice.
10) Mix well until coconut mixed allover. (check for salt, if need add it now).
11) Coconut rice is ready to be served.
Note :
1. In this recipe, i used cooking oil. You can use coconut oil if you like the flavour.
2. For this recipe, keep the flame in low as the coconut might get stick to the bottom.
3. Add little more curry leaves gives nice flavour to the recipe. Urad dal and bengal gram dal gives nice texture, do not skip it.
