Mint coriander rice recipe with step by step pictures 


             Mint coriander rice or coriander rice is a south-indian variety rice recipe.  It is a lunch box recipe too.  I usually make Mint thogayal  for rice which is an accompaniment.  But this mint coriander rice is very easy to cook.  If you have cooked rice,  then this recipe can be made within 10 mins.  Peanuts and cashews are optional but it gives you nice texture and tastes good.

Ingredients  : 

. Mint leaves  -  1 handful(loosely packed)  
.  Coriander leaves -  1 handful  (loosely packed)  
.  Cooked rice  -  2 cup 
.  Coconut -  2 tblsp(grated) 
.  Ginger garlic paste -  1 tblsp 
.  Green chillies -  2 
.  Cooking Oil -  1 tblsp
.  Sesame oil -  1 tblsp 
.  Mustard seeds -  1 tsp 
.  Urad dal -  1 tsp 
  Chana dal -  1 tsp 
.  Curry leaves  -  1 sprig 
.  Roasted peanuts -  1 tblsp 
.  Cashew nuts -  6 
.  Salt to taste 

Method : 

          1. Add sesame oil into cooked rice.  Mix and keep it aside.  

          2. Grind mint,  coriander leaves,  ginger garluc paste,  coconut and green chilli in a mixer jar by adding little water to it. 

         3. Heat oil.  Add mustard seeds,  urad dal,  chana dal followed by curry leaves,  peanuts and cashews.  After it turns to golden brown,  add the ground paste. 

         4. Add salt and cook for 2 mins in medium flame.  Add cooked rice.  Mix well.  Mint coriander rice is ready. 


Pictorial  : 

            1) Take cooked rice in a bowl,  add 1 tblsp of sesame oil and mix it.  Keep it aside. 


            2) Take all the ingredients to grind. 


             3) Transfer to the mixer jar. 


            4) Grind to smooth paste by adding little water. 


            5) Heat oil in a kadai.  Add mustard seeds. 


           6) After it splutters,  add urad dal and channa dal. 


          7) Add curry leaves,  cashews and roasted peanuts. 


         8) Fry until it turns to golden brown. 


          9) Add the ground paste. 


         10) Add salt. 


         11) Cook in medium flame for 2 mins until the water dries off. 


         12) Add cooked rice. 


         13) Mix well. (If required,  add salt) 


         14)  Mint coriander rice is ready. 


Note : 

          1. If you like,  you can add some chopped onion in this recipe. 

          2. Adding sesame oil keeps the rice separated and gives nice flavour.
