Potato masala recipe with step by step pictures
Potato masala is a sidedish recipe for south-indian flat breads like chapathi, naan, roti and even for dosas. This masala is a semi gravy version. It is little thick and finger licking recipe. Potato is the vegetable which is loved by kids and this recipe is one of the awesome sidedish for chapathi. It is very simple to cook. Just boil the potatoes, make a masala, add the Potato and cook. Ingredients :
. Potato - 3 (boiled)
. Onion - 2 big onion (finely chopped)
. Tomato - 2 big sized (finely chopped)
. Green chilli - 2 (finely chopped)
. Ginger garlic paste - 1 tblsp
. Chilli powder / kashmiri chilli powder - 1 tblsp
. Coriander powder - 1 tblsp
. Garam masala - 1 tblsp
. Oil - 2 tblsp
. Cinnamon - 3
. Cloves - 4
. Cardamom - 3
. Fennel seeds - 1 tsp
. Cumin seeds - 1 tsp
. Salt to taste
. Coriander leaves to garnish
Method :
1. Pressure cook the potatoes. Peel the skin. Chop into cubes. Keep it aside.
2. Heat oil. Add whole spices. After it crackle, add onion, grreen chillies. Saute until golden brown.
3. Add ginger garlic paste. Saute until raw smell goes out. Add tomatoes with salt. Saute until mushy.
4. Add spice powders. Mix well and cook until oil oozes out. Add potatoes. Mix it. Add 1/2 cup water. Cover and cook until gets little thick gravy.
5. Switch off the flame. Garnish with coriander leaves. Potato masala is ready to be served.
Pictorial :
1) Pressure cook the potatoes for 3 whistles. Peel the skin and chop into cubes. Keep it aside.
2) Heat oil in a pan. (I have used my pressure cooker as it is wide and has heavy bottom. Using heavy bottomed or non-stick pan helps the gravy not stick to the bottom.)
3) Add whole spices ( cinnamon, cloves, cardomom, fennel seeds and cumin seeds)
4) After it splutters, add chopped onion and green chillies.
5) Saute until it becomes golden brown.
6) Add ginger garlic paste. Saute until raw smell goes out.
7) Add chopped tomatoes.
8) Add salt.
9) Saute until mushy.
10) Add chilli powder, coriander powder and garam masala.
11) Mix well and cook until oil separates.
12) Add potatoes.
13) Mix it gently.
14) Add 1/2 cup of water.
15) Cover and cook in medium flame for 5 mins.
16) Switch off the flame. Garnish with coriander leaves.
17) Serve.
Note :
This masala is little thick. If you want gravy add 1 cup of water to it as per your consistency.
You can add your favourite vegetables like cauliflower, mushroom, mixed vegetables, paneer and even chicken do work for this recipe.
