Carrot poriyal / Carrot stir fry south-indian style/ sidedish for rice

Carrot poriyal recipe with step by step pictures 


             Carrot poriyal is a south-indian sidedish recipe for rice.  This recipe is a basic poriyal recipe that is followed for most of the veggies.  Carrot can be chopped into fine cubes or you can simply grate the carrots to make poriyal.  I used to grate the carrots for poriyal as i mix this to steamed rice for my kids and it tastes soo good.  Kids love carrots very much and it is healthy too.

Ingredients   :

.   Carrots  -  8 medium sized 
.   Onion  -  1 medium sized (finely chopped) 
.   Dry red chillies   -  2 (broken) 
.   Curry leaves   -  1 sprig
.   Oil  -  2 tsp
.   Mustard seeds  -  1 tsp
.   Urad dal  -  1 tsp
.   Chana dal  -  1 tsp
.   Grated coconut   -  2 tblsp
.   Salt to taste

Method  :


          1.  Cut the edges and peel the skin of the carrots.  Grate the carrots. 

         2. Heat oil.  Add mustard seeds,  urad dal and chana dal.  After it crackle and turns to golden brown,  add onion,  curry leaves and dry red chillies. 

        3. Saute for few secs.  Add grated carrots.  Saute for a min.  Add salt and drizzle 2 tblsp of water to it.

       4. Cover and cook for 5 mins.  Add grated coconut.  Mix well for a min.  Carrot poriyal is ready.

      4) Add mustard seeds,  urad dal and chana dal. 


      5) After it splutters and turns to golden brown,  add finely chopped onion, curry leaves and dry red chillies. 


      6) Saute for few secs. 


      7) Add grated carrots. 


       8) Saute for a min. 


       9) Add salt.  Mix well. 


       10) Drizzle 2 tblsp of water

11) Cover and cook for 5 mins in low flame. 



        12) Add grated coconut. 

        13) Mix well for a min. Switch off the flame. 


        14) Carrot poriyal is ready to be served with rice.
