Snake gourd seeds chutney recipe with step by step pictures 


                Snake gourd seeds chutney is a rice accompaniment as well as a sidedish for idli,  dosas. This chutney is made with the tender seeds of snake gourd.  It gives great taste and flavour.  This is a healthy recipe as we have used the seeds in it.  Whenever i cook Snake gourd fry or Snake gourd kootu  i scarp the seeds if it is tender and keep it in the refrigerator for further use.  And the next day i cook the seeds chutney.  
              For the first time i cook this recipe,  my husband says that the taste varied from the usual chutneys but it tastes too good.  So i cook this recipe often for breakfast as a sidedish for idli or dosa. Hope you like the recipe.  Try it and let me know how it turns out to you.

              I have made it for dosas,  so it is little thin.  If you make it as a rice accompaniment,  do not add more water and then you get thick consistency and it is ideal to have with rice.  Add a tablespoon of sesame oil when served for rice and it make the dish too yummy.

Ingredients   :

.  Snake gourd seeds  -  1 cup (approximately) 
.  Onion  -  1 big sized (roughly chopped) 
.  Tomato  -  1 big sized (roughly chopped) 
.  Garlic cloves  -  4 nos. 
.  Grated coconut   -  2 tblsp 
.  Urad dal  -  1 tsp
.  Chana dal  -  1 tsp
.  Cumin seeds  -  1 tsp
.  Dry red chillies   -  2 
.  Oil  -  1 tblsp 
.  Salt to taste 
.  Mustard seeds  -  1 tsp (to temper) 

Method  :

          1.  Dry roast urad dal,  chana dal,  cumin seeds and dry red chillies.  Keep it aside. 

         2. Heat a tsp of oil.  Add Snake gourd seeds.  Saute for 3 mins until it shrinks and turns to golden brown.  Keep it aside. 

         3. Add a tsp of oil.  Add onion,  tomato and garlic.  Saute until cooked.  Add grated coconut.  Saute for a min. 

        4. Let all the ingredients gets cooled.  Transfer to the mixer jar.  Add salt.  Grind it to smooth consistency.  

       5.  Temper with mustard seeds.  Serve. 

Pictorial   :

         1) Take urad dal,  chana dal,  cumin seeds and dry red chillies in a kadai. 


        2) Dry roast the ingredients. 


        3) Heat a tsp of oil in a kadai. 


        4) Add Snake gourd seeds. 


        5) Saute for 3 mins in low flame until it shrinks and turns to golden brown colour. 


        6) Keep the roasted ingredients aside. 



        7) Heat a tsp of oil in the same kadai. 


        8) Add roughly chopped onion,  tomato and garlic. 


       9) Saute until the veggies gets cooked. 


      10) Add grated coconut. 


       11) Saute for a min.  


        12) Let all the ingredients gets cooled.  Transfer it to the mixer jar. 


        13) Add salt. 


        14) Grind it to smooth consistency by adding little water. 


       15) Temper with mustard seeds.  Serve.
