Mixed vegetables kurma recipe with step by step pictures 


                 Mixed vegetables kurma is one of the famous sidedish for chapathi and parotta in most of the vegetarian hotels in tamilnadu.  It is very easy to cook recipe and tastes delicious.  I used carrots,  potato, french beans and green peas.  You can add other vegetables like cauliflower,  mushroom, soya chunks, white channa and black channa too.  
            I always cook kurma in kadai.  But it doesn't tastes like hotels.  Finally i found the that cooking in pressure cooker gives me exact taste served in hotels.  While pressure cooking,  the oil oozes out and that was it.  It gives hotel taste.  Do try it.

Ingredients  :

. Mixed vegetables (carrot, beans, potato, green peas)   -  2 cup (chopped into small cubes) 
.  Onion  -  1 big sized (finely chopped) 
.  Tomato  -  1 medium sized (finely chopped) 
.  Ginger garlic paste  -  1 tblsp 
.  Coconut  -  3 tblsp
.  Fried gram /pottukadalai  -  1 tblsp
.  Fennel seeds  -  1 tsp
.  Oil  -  2 tblsp
.  Cinnamon  -  3 (broken)
.  Cloves  -  4
.  Cardamom  -  3
.  Turmeric powder  -  1/2 tsp
.  Chilli powder  -  1 tblsp
.  Coriander powder  -  1 tblsp
.  Garam masala  -  1 tblsp
.  Salt to taste


Method  : 

           Heat oil.  Add whole spices.  After it sizzle,  add chopped onion.  Saute until soft. 

           Add ginger garlic paste.  Saute until raw smell goes out.  Add tomato followed by Turmeric powder and salt.  

          Saute until mushy.  Add spice powders.  Saute and cook until oil comes out. 

         Add chopped veggies.  Saute for 2 min.  Add 2 cups of water.  Mix well.  Pressure cook for 2 whistles. 

         Meanwhilie,  grind coconut,  fried gram and fennel seeds in a mixer jar by adding little water to a smooth consistency.  

        After pressure releases,  add ground paste.  Mix well and cook for 5- 10 mins in medium flame.  Your vegetable kurma is ready to be served.

         3) After it sizzle,  add chopped onion.  


        4) Saute until it becomes soft.  Add ginger garlic paste. 


        5) Saute until raw smell goes out. Add tomato.

7) saute until mushy.  Add chilli powder,  coriander powder and garam masala.  



        8) Saute and cook until oil oozes out. 


        9) Add chopped veggies. 


        10) Saute for 2 mins.


        11) Add 2 cups of water. 


        12) Mix well and pressure cook for 2 whistles. 


        13) Meanwhile,  take coconut,  fried gram and fennel seeds in a mixer jar. 


        14) Grind to a smooth consistency by adding little water. 


       15) After pressure releases,  add ground paste. 


      16) Mix well and cook for about 5 -  10 mins in medium flame.  


      17) Vegetable kurma is ready to be served.


        18) serve with idli,  dosa,  idyappam,  chapathi,  roti or parotta.
