                Vazhaithandu kootu is a south-indian rice accompaniment.  It is very tasty and healthy recipe which is cooked within 15 mins.  The most important thing is that it takes little time to clean the vazhaithandu (plantain stem).  It is a must to remove the threads in vazhaithandu otherwise it wont good while eating. You can clean it the previous day and soak the chopped vazhaithandu in buttermilk and you can keep it in refrigerator. It will helps to cook quick in a busy morning. Do try at your home.

Ingredients  :


.  Vazhaithandu  / plantain stem  -  1 cup ( chopped) 
.  Split moong dal  -  1/3 cup
.  Channa dal  -  1 tblsp
.  Shallots  - 10 (finely chopped) 
.  Green chilli  -  2 (as per your spice level) 
.  Turmeric powder  -  1 tsp
.  Grated coconut  - 2 tblsp
.  Cumin seeds  - 1 tsp
.  Oil  -  1 tblsp
.  Mustard seeds  -  1 tsp
.  Urad dal  -  1/2 tsp
.  Curry leaves  - 1 sprig
.  Hing / asafoetida  -  1/2 tsp
.  Salt to taste 


Method  :


             1.  Remove the outer layer of plantain stem (vazhaithandu) . Cut it into disc shape. Remove the threads in between the discs. Chop it into small cubes. Soak in water or buttermilk to avoid colour changes. 

            2.  Wash moong dal and chana dal. Take it in pressure cooker along with chopped vazhaithandu, shallots, green chillies, turmeric powder. 

           3.  Pressure cook for 4 whistles. After pressure releases, mash it with a laddle.  Keep it aside. 

          4. Grind the grated coconut and cumin seeds in a mixer jar by adding little water to smooth paste.  Add this mixture into cooked dal. 

          5. Temper with mustard seeds, urad dal, curry leaves and hing. Pour it into dal.  Add salt. Cook altogether for 4 - 5 mins.  Turn off the flame. Vazhaithandu kootu is ready.

Chop the discs into small cubes. Soak it in water or buttermilk to avoid colour changes


Wash the moong dal and chana dal. Take it in pressure cooker



           
Add chopped vazhaithandu, shallots, green chillies and turmeric powder


                       Add 1 cup of water


             Pressure cook for 3 - 4 whistles


                        Mash it with a laddle


In the meantime, take grated coconut and cumin seeds in a mixer jar


Grind it to a smooth paste by adding little water


Add grounded coconut mixture and pour the tempering made oil, mustard seeds, urad dal, curry leaves and hing. Add salt


       Cook altogether for 5 mins. Turn off the flame


Tasty and healthy vazhaithandu kootu is ready to be served
