Snake gourd fry/ pudalangai poriyal

Snake gourd (pudalangai)  poriyal recipe with step by step pictures 


                Snake gourd fry is a sidedish recipe for Indian vegetarian meal.  This recipe is a basic poriyal recipe that the chopped Snake gourd is cooked along with onion and with some tempering,  and finally topped with some grated coconut.  I follow this method for most of my poriyal recipes as it is very easy and simple to cook yet very tasty.

Ingredients  :

.  Snake gourd  -  2 cup (chopped into small pieces) 
.  Onion -  1 medium onion (finely chopped) 
.  Curry leaves -  1 sprig 
.  Coconut -  2 tblsp (grated) 
.  Oil -  1 tblsp 
.  Mustard seeds -  1 tsp 
.  Urad dal -  1 tsp 
.  Chana dal -  1 tsp 
.  Turmeric powder -  1/2 tsp 
.  Kulambu powder -  2 tsp 
.  Salt to taste 

Method :

           1. Heat oil.  Add mustard seeds followed by urad dal and chana dal.  Let it splutter and becomes golden brown,  add chopped onion and curry leaves. 

          2. Saute until translucent.  Add snake gourd.  Saute for a min.  Add turmeric,  kulambu powder and salt.  Saute for few secs. 

          3. Add 1 cup of water.  Mix well.  Cover and cook until soft and water completely dries off.  Add grated coconut.  Mix well.  Snake gourd fry is ready. 


Pictorial  : 

           1) Heat oil in a kadai. 


          2) Add mustard seeds. 


          3) After it crackle,  add urad dal and chana dal. 


         4) Let it turns to golden brown.  Add chopped onion and curry leaves. 


        5) Saute until it becomes translucent. 


        6) Add chopped Snake gourd. 


        7) Saute for a min. 


         8) Add turmeric powder,  kulambu powder and salt. 


        9) Saute for few secs in medium flame.  (do not burnt the spice powders) 


        10)  Add 1 cup of water. 


         11) Mix well.  Cover and cook until soft and water dries completely.  (cook in medium flame) 


         12) Add grated coconut. 


         13) Mix well.  Switch off the flame.  


         14) Snake gourd poriyal is ready to be served. 

Note :

           You can replace kulambu powder with chilli powder and coriander powder in this recipe. 
           You can remove the flesh inside the snake gourd.  If it is tender then you can add that too.
