Soya chunks masala recipe with step by step pictures
Soya chunks also known as meal maker is rich in protein. It is a better option to get protein for vegetarian . I usually add this soya chunks in most of my pulao recipes, veg biriyani and also in kurmas. Today I have made soya chunks masala which is a sidedish recipe for indian flat breads like chapathi, naan, paratha, roti and also for idli dosas. This recipe is a simple yet very tasty sidedish and you can add your choice of veggies like potato, egg, cauliflower, capsicum, carrots in this recipe.

Ingredients :
. Soya chunks - 1/2 cup
. Oil - 2 tblsp
. Cinnamon - 2
. Cloves - 4
. Cardamom - 2
. Fennel seeds - 1/2 tsp
. Onion - 1 big sized (roughly chopped)
. Tomato - 1 medium sized (roughly chopped)
. Garlic cloves - 6
. Ginger - 2 inch pieces
. Turmeric powder - 1/4 tsp
. Kashmiri chilli powder - 1 tblsp
. Coriander powder - 1/2 tblsp
. Cumin powder - 1 tsp
. Salt to taste
. Kasuri methi - 1 tsp
Method :
1. Soak soya chunks in hot water for 5 mins. Drain the water and squeeze the soya chunks to remove excess water. Keep it aside.
2. Heat oil in a kadai. Add whole spices. After it crackle, add roughly chopped onion, tomato, ginger and garlic. Saute until mushy.
3. Turn off the flame. Let it cool. Transfer to mixer jar. Grind it to smooth paste by adding little water.
4. Heat oil in a kadai. Add ground paste. Saute for a min. Add spice powders and salt. Saute until raw smell goes out. Add soya chunks.
5. Mix well. Add 1/2 cup of water. Cook for 5 mins in medium flame. Finally add crushed kasuri methi. Mix well and cook for a min. Turn off the flame. Tasty soya chunks masala is ready.

Boil the water

Add cinnamon, cloves, cardamom and fennel seeds
After it splitters and turns to golden brown, add roughly chopped onion, tomatoes, ginger and garlic
Saute until mushy. Turn off the flame
Let it cool. Transfer to the mixer jar
Grind it to a smooth paste by adding little water
Heat oil in a kadai
Add ground paste
Saute for a min
Add chilli powder coriander powder, cumin powder, turmeric powder and salt
Saute well until raw smell goes out and oil oozes out
Add soya chunks
Add 1/2 cup of water. Mix well
Cook for 5 mins in medium flame until oil separates
Add crushed kasuri methi. Mix well and cook for a min. Turn off the flame
Tasty soya chunks masala is ready to be served
