Murungaikai maangai sambar recipe with step by step pictures
Murungaikai maangai sambar (drumstick raw mango sambar) is a traditional south-indian sambar recipe. My mom makes it once or twice in a month. It is super delicious with little tanginess of the raw mango. You can add any vegetables like carrot, beans, brinjal in this sambar but the hit one is the drumstick and raw mango combination. Ingredients :
. Toor dal - 1/2 cup
. Drumstick - 2 (chopped into 2inch pieces)
. Raw mango - 1/2 (chopped into cubes)
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1/2 tsp
. Onion - 1 big sized (chopped lengthwise)
. Asafoetida - 1/2 tsp
. Tomato - 1 medium sized (chopped lengthwise)
. Turmeric powder - 1 tsp
. Sambar powder - 1 tblsp
. Salt to taste
Method :
1. Wash toor dal well and take it in pressure cooker. Add turmeric powder and water to it.
2. Pressure cook for 4 whistles. After pressure releases, mash the dal well with traditional mathu.
3. Heat oil in a kadai. Add mustard seeds and urad dal. After it crackle, add onion and hing. Saute until translucent.
4. Add tomato. Saute until mushy. Add veggies. Saute for a min. Add sambar powder and salt. Mix well in low flame.
5. Add 1 1/2 cup of water. Cook for 5 mins. Add mashed dal. Mix well and cook for another 5 mins. Turn off the flame. Drumstick raw mango sambar is ready.

Take toor dal in pressure cooker
Rinse it once. Add turmeric powder
Add 1 cup of water to it
Pressure cook for 3 - 4 whistles
Mash it well. Keep it aside
Heat oil in a kadai
Add mustard seeds and urad dal
After it splutters, add sliced onion and asafoetida
Saute until onion becomes translucent
Add sliced tomato
Saute until mushy
Add chopped drumstick and raw mango
Saute for a min
Add sambar powder and salt
Give it a mix
Add 1 1/2 cup of water to it
Cook for 5 mins
Add mashed dal into it
Mix it well. Add water if required
Cook for 5 mins. Turn off the flame
Tasty murungaikai maangai sambar is ready to be served
