Urulaikilangu podimas recipe with step by step pictures
The ultimate south-indian Potato recipe is the Potato podimas (urulaikilangu podimas). This recipe is a sidedish for vegetarian meal in most of the South-indian marriages. I thought it was a limited version of poori kilangu(poori masala). I have cooked with potatoes alone. You can add some carrots, beans or green peas which gives you nice look for the recipe. I liked this recipe soo much.

Ingredients :
. Potato - 4 (medium sized)
. Onion - 1 big onion (finely chopped)
. Curry leaves - 1 sprig
. Green chillies - 2 (finely chopped)
. Turmeric powder - 1 tsp
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1 tsp
. Chana dal - 1 tsp
Cumin seeds - 1 tsp
. Salt to taste
Method :
1. Pressure cook the potatoes. Peel the skin. Mash roughly and keep it aside.
2. Heat oil in a kadai. Add mustard seeds, urad dal, chana dal and cumin seeds. Let it splutter and turns to golden brown.
3. Add chopped onion, curry leaves and green chillies. Saute until it becomes translucent.
4. Add turmeric powder and salt. Saute for few secs. Add mashed potatoes. Mix well. Mash a little.
5. Cover and cook in low flame for 5-10 min. Urulaikilangu podimas is ready.

3) Let it crackle and turns to golden brown.
4) Add chopped onion, curry leaves and green chillies.
5) Saute until it becomes translucent.
6) Add turmeric powder and salt.
7) Saute for few secs.
8) Add mashed potatoes.
9) Mix it well.
10) mash a little. Cover and cook for 5-10 min in low flame. (stir in between as you dont want the potatoes stick at the bottom)
